Many don't like how the chef doesn't converse with them. They think the chef has a bad attitude. But during my experience, I didn't think so.

This just hit my bucket list.
That really reminded me of a French Laundry/Le Bernadin style tasting menu, but with seasonal Japanese focused sourcing, even for the charcuterie (I hope). Dried meats was definitely a surprise. It's also nice to see a restaurant that's known for its cooked dishes made with the same proteins typically used raw for sushi. You can tell they were proud of their foraged ingredients and preparations. It's clear the chef just wants his input to be the meal, and the guests have conversation with each other. The gizzard shad tureen thing was definitely different. I really liked the clam/milt/ankimo bouillabaisse--really interesting and tasty looking. Thanks again for the view of a chef holding it down in his own way in a very beautiful restaurant.
