    Classification of wheat by sowing time In the Northern Hemisphere, winter wheat is usually sown in September and harvested in August of the following year. They are unique in their vernalization (springing) requirements. They need to survive a period of cold in order to bloom. Vernalization is a physiological process that they must go through at low temperatures before they can start flowering. This winter wheat has a physiological property that prevents it from developing flower buds too early, thus it does not die in cold weather.For plants, the vernalization period depends on two factors: the temperature during wintering and the length of the wintering period. Plants have passed the vernalization stage when the meristem has reached the double-dorsal stage. Three different temperatures are involved in this process: the minimum temperature below which vernalization does not occur is from -1.3°C to -4°C the optimum vernalization temperature when fully effective is usually between 3°C and 10°C with a peak at 4.9°C the maximum temperature beyond which vernalization no longer occurs is 15.7°C Studies have shown that there is a clear linear relationship for vernalization between 0oC and 8°C. Common winter wheat needs a 50-day period for optimal vernalization. This period is known as "Effective Days" for saturated vernalization. Common summer wheat Spring wheat, on the other hand, does not require a period of low temperatures (vernalization) to start flowering, so it is usually sown in April/early May and harvested in August/September. The vegetation period lasts from 120 days to 180 days, depending on the climate. Spring wheat generally needs temperatures between 7°C and 18°C ​​for 5 to 15 days to activate flowering.

    I think You supposed to use wheat flour for pizza and rye is for bread. Simple mistake here and there.
