I do a version of this dish Rik , but as a salad, using balsamic vinegar, and Spanish onion, raw apple , it makes a great contrast cleanser in the mouth while eating ‘rich’ dishes, and it looks festive and colourful on the Christmas table too.
I could see using this cold as a basis for a sweet and savory salad, adding beets, maybe baked squash and blue cheese. Definitely going to make your version and mine!!

Nice Rik. I would think this could be done stove top as well , maybe with a dab of butter. Thinking it would be easier to turn on the hob in a large skillet rather than in the oven.
Hi Rik, I was planning on preparing my braised spiced red cabbage & apple with port side dish this afternoon for freezing ahead of Xmas. Once again you come up with something new, would never have thought of roasting this in the oven, it looks delicious & vibrant 😍. Would your roasted version still be suitable for freezing ahead, I only have a small oven, so it’s very much a juggling act on Christmas Day for me, fitting so many different things into the oven, so have to rely on the microwave and airfryer for some items. You ruined it with the walnuts... As a former walnut grower...I wouldn't recommend them for human consumption... Below I'll list the tastier alternatives... I actually used a version with shredded coconut and/or pecans...and actually won a prize for it... Almonds work fairly well...although a little bland... Peanuts also don't quite work with this either as I felt the flavors clashed a little too much...just not ideal with cabbage...but I did find a version that works with the peanuts added...minced bacon...
