    Rice cooker meals are some of my fave meals since they can be so delicious yet require minimal effort 😌
    Here’s the recipe:
    - Rinse 1 cup of short grain rice until it runs clear and add 1 cup of water
    - Add 1/2 cup diced carrots, 2 sliced baby bok choy, 1/2 cup frozen edamame, 1/2 block of diced firm tofu
    - Mix together 2 tbsp soy sauce, 1 tbsp dark soy sauce, 1 tbsp shaoxing wine, 1 tbsp sesame oil, 1 inch grated ginger, 1 minced garlic clove, and 1/2 tbsp sugar
    - Drizzle over food
    - Cover with lid and turn on rice cooker
    - Once cooked, mix everything together

    My favorite is putting gochuchang in with the rice, along with a little but of butter. I've added frozen edamame and frozen broccoli, and then let it cook! Throw in my meat of choice when it's done and top with some kewpie mayo! This has really saved my butt when it comes to dinners after a long day at work.

      @@RedFeather-qv6vs I'd imagine that works with tenjang, ssanjang (spelling?) korean BBQ sauces or other sauces too. I make similar with teriyaki, hoisin, BBQ, or honey mustard.

    Thank you so much for these tips! I sustained a brain injury when I was 24 two years ago and I've had to completely relearn how to cook ever since. I've made good strides in my recovery but I still have trouble concentrating and standing long enough to be able to follow even most "easy" recipes". Tips like this are life savers - truly, thank you!

    Omg! If I can do more than one thumbs up I would! I have like no kitchen space or where to cook and I would love more recipes like this! I am a diabetic and I do love steamed rice but need ideas to add veggies in my life. 👍🏻👏🏻Thank you!!!!

    Rice cooker meals got me through college in the 90s. We used frozen veggies, because we had no car and no easy places to get fresh veggies we could afford, but it was still so much healthier, cheaper and more convenient than fast food or the cafeteria. Big shout out to my Filipino roommate who taught this Irish girl the beauty of a rice cooker!

      Fun fact! Frozen veggies tend to be just as good as fresh ones if not better! The reason being that veggies and fruit are typically frozen soon after the harvest while they're already ripe. Fresh produce tends to be harvested before fully ripening so it can finish the process during transport and won't go bad too soon after arriving at the grocery store.

    I love that when you say something is super easy, takes 5 mins or requires little to no cooking you actually mean it! So many youtubers claim they're about to show you a perfect meal for busy days then proceed to spend 30 minutes minimum in preparations while using +3 recipients...

      Y'all ever see that video from the onion where the lady uses like every dish in her kitchen to make a "quick and simple meal" and it requires multiple ovens?
      That's what most of these videos remind me of (Not this specific one of course) but those videos that are like "simple quick and delicious meals for your family and only 15 minutes" and then the cook time itself is above 30 minutes...... That's not even mentioning the prep time

    If you don't have a rice cooker, this can also be done on the stove in a small pot! Very convenient, and bonus accidentally vegan 👍
    Switch it up with different sauces (stock &/or crushed tomatoes, dried or fresh herbs, maybe a touch of cream) and proteins (shrimp will cook from raw, or you can do some rotisserie chicken, sliced sausage (meat or veggie), canned beans etc). I'll often simmer a couple of chicken breasts at a time, keep the meat in the fridge, and use the "stock" to cook my carb for a day or two.
    And you can change up the grain, too! Different types of rice, bulgur, quinoa, wheat berry, whole oats... tons of options, they're all tasty, good for you (depending on dietary restrictions, of course), and they make me feel like I've cooked some fancy, health food store creation 😎

      ​ @veronicaperez3555 You can always replace ingredients in a recipe to suit you, they're just a guide, not set rules. You'll just get a different flavor at the end if you make major substitutions, but that's fine - it's your food, after all! The sauce in the recipe is pretty much all soy sauce and wine, so you'll get a *completely* different flavor.
      Sherry can supposedly be a decent substitute for Shaoxing wine, but I've never tried it (and I'd rather buy a bottle of Shaoxing than a bottle of sherry, personally :P).
      There's no real substitute for soy sauce - you can use just one or the other of the two kinds, but they bring different things to the dish: light or regular soy sauce is saltier, while dark soy sauce has a very strong soy flavor. You'll want to add some form of salt if you skip all the soy or the dish will be very bland (there may be salt in the wine too, depending on what you buy - the "cooking grade" wine often has salt added, while the "drinking grade" wine doesn't). Maybe a stock cube dissolved in a small amount of hot water? *Completely* different flavor, of course, but the technique will remain the same.
      All three ingredients (light/regular soy sauce, dark soy sauce, and Shaoxing wine) are very, very shelf stable and will last for years without going bad, so I'd really encourage you to try to get hold of a small bottle of each if you can! They're extremely common in Chinese cooking, almost at the level of "salt and pepper" in Western cooking.

I know it can be very difficult to figure out what is easily replaced vs what will have more of an impact, especially when you're not already familiar with the ingredients! Just a heads up about dark soy sauce: it's quite a bit different from "regular" or light soy sauce. I really like it, but a friend of mine thought it tasted like dirt 🤦 I strongly prefer the Lee Kum Kee brand dark soy sauce, but obviously availability will vary a lot. I'd recommend getting the smallest size bottle you can at first, and don't give up if you don't like it, just try a different brand (I can't stand some brands, but I know some people don't notice a difference at all and think I'm crazy for thinking I have a preference 😅). Cooking is all about experimentation, and you can always adapt different techniques to use with ingredients you already have or prefer.

    Thank you for this suggestion. I just happened to see it while visiting my elderly mom. She used to cook family-sized batches and share the extra with a couple of her friends. But since they've moved away, she doesn’t cook as often, finding it easier to eat cereal, salads or sandwiches than dirtying her kitchen just for herself. Seeing her perk up while watching this was wonderful!

      I have powdered spices for my sick days and I use a food chopper/grinder instead of a knife all the time. My food might look like baby food sometimes but it tastes great.

      If you have the space, it can also help to portion and freeze ingredients during a hyperfocus burst. So when you're having bad days you can have a super easy meal. You can low effort drop a frozen block of ingredients on the top of rice, then let it cook. It takes some practice to find what works best for you, but it's amazing once you get it right. My favorite is freezing strips of fish and nori (seaweed), tbsp spicy mayo, tbsp of soy sauce, tsp minced garlic, and a handful of chopped mushrooms or soy beans in a 4 or 8 oz deli container. When I cook it for a meal, and I have energy, I will also add whatever extra veggies I have left from other meals from the week too. So good! Fresh ingredients can make it better, but frozen is good enough when you feel overwhelmed.

    FYI: use a plastic spoon just in case
    Most modern rice cookers have a nonstick coating on the inner sleeve and metal utensils can damage it

      she only mixed the soy sauce mix in a different pot, and only poured it in the rice cooker…for mixing in the rice cooker she used a white colour 'plastic' spoon that is designed especially for that...

      ​@@Borealissssssssthank you for your reply…but i don't think she eats out of the whole slow cooker pot, it was in front of her just for the display, while taking the video… if she really eats out of the whole pot, then she'll have bigger problem than just scratching the pot=the food will get spoiled from her saliva and she would get a food poisoning, but i don't think she wouldn't know that😊

    I eat this at least once a week and it's so good! I replace the shaoxing wine and sugar with mirin and add spam for extra protein. I also love eating it with kimchi

    At the height of what i thought was post partum depression i would use my rice pot with a steamer basket every single day. It was seriously the most effective tool for keeping me sane. I got a single fresh hot meal made which is far more comfortong than people realize they even needed. the rest of the time i lived on oatmeal, bananas, and snack bars and half eaten pb&js from my toddlers leftovers. The power of a simple effective tool that saves you time and energy is so undershared. My husbad was rarely home as he worked full time and was a student full time but he would shop for things i could just dump and go(pre chopped frozen veggies for the win)with that rice cooker and made sure it got washed every night for me if I hadn't gotten it done yet. Love this video so much!

    Let me say this….DE.LI.CIOUS! 😍 I tried it, and it’s amazing. I even made a big batch for for me and my family when I did it again. I did substitute the lima beans for black beans and I also added mushrooms. and still tasted Awesome. This is a must try recipe

      Pre chopped frozen veggies are my favorite hack. I grab them so much more frequently because it feels way less stressful to me because it's not nearly as taxing to prepare. And then I don't have compounded shame for letting fresh veggies go bad because I didn't get to it. If you don't already use them regularly, it's a game changer. Beets and broccoli are my two favorite to get. I don't get leafy greens this way, I don't like them frozen.

      @@Miriam-ui5pw you can find them at thrift stores all the time now because instant pots have the rice cooker feature on them. So if you want to score a good deal, check there first! If you are overwhelmed with stuff and looking to minimize kitchen tools, then just get the instant pot instead.

      I struggle with cooking some days, which is strange because it used to be my favourite hobby…
      Anyway, another easy 1 dish meal is noodles (rice or ramen) and broth (I often just use bouillon powder and water) with veggies and proteins on top, cover and microwave. Sometimes I’ll throw in soy sauce and ginger or whatever is easy to grab and looks yummy. It’s adaptable to whatever you have on hand and can be quite healthy. My son seems to think it’s like a fancy restaurant meal too 😂

    WAIT!!!! THIS IS A GAME CHANGER! I HAVE TO TRY THIS!!! I have a rice cooker, but I only use it for rice, and I make this EXACT type of meal, but just cook the tofu and veggies on the stove separately!       Someone suggested that you cook veggies and proteins of choice only and freeze them in portions ahead of time. Then when you cook, just drop the frozen ingredients on top of the rice and cook together. Of course you can cook everything and then freeze, microwave when eating. Both work. The only ingredient you shouldn’t freeze is potatoes, fresh watery vegetables such as cucumber

    Lentils can be cooked with rice in the cooker as well! 🙌 These things are so helpful for those of us with chronic illness and extreme fatigue and our numbers are growing thanks to a certain v-1rus. Meal prep alone can take us out for the entire day. Game changer. 😊👍

    I have been telling people new to cooking about this for ever! These were my go-to meals in high school and college, and I made it simple with slivered ginger, thinly sliced garlic, cubed chicken and some soy sauce, sesame oil, and a pinch of chicken bouillon or Dasida in the cooking water. Set it and forget it, and a full meal is ready in a half hour. Lots of scallions on top and another drizzle of sesame oil, a sprinkling of salt and sesame seed and it’s the best comfort meal ever.

      @@aprettygothichick I added it raw buti sliced it almost as thinly as I could so maybe less than 1cm? It was fully cooked through. Even if it was a bit thicker as long as it is spread out I would imagine it would still cook in the time the rice cooker takes. With the model I have it is on cook mode for about 20 minutes and then says to leave it for about that time again with the lid on to make use of the steam.

    My favorite meal to make like this is white or brown rice with kielbasa (I like the turkey one), carrots, daikon, and green onion (usually use this for flavor only & discard at the end). There's enough salt in the kielbasa & flavor in it and the veggies that I don't need to add anything else.

    This is how I survived college 😊 a favorite of mine is to add mushrooms, bamboo shoots and oyster sauce. I'd add whatever greens I have on hand and it's a great warming comfort dish that's easy to make and doesn't take your constant supervision.
    I'm chronically ill, chronically in pain and have the energy level of a rock. So any easy meal that doesn't take full on cooking is a winner!

    My family does this on vacations! We pack a small rice cooker and rice and then buy basic groceries from the grocery store, so we can have (cheap) home-cooked meals from our hotel even without a stove

      That seems like a lot to carry for a vacation....rice cooker and rice. Did you bring your own seasonings too? I believe you are not allowed to cook in hotel rooms cause it stinks up the whole room.

      @@SimplyK888 you can either bring a small bag of rice or just buy a small bag from the grocery store there. Usually no seasonings except like packs of soy sauce from a restaurant there (or if we're staying in an airbnb, whatever the airbnb has). We've never made anything that would actually create a noticeable order beyond a few feet from the rice cooker -- just rice, frozen vegetables, and beans, that sort of thing

    I look forward to your videos because my 22 year old son has ADHD and I always worry when he on his own. He forgets to eat properly and then he just gives up and eats junk. You show him ways that are easy. Like the one with salad all chopped together.

    i used to make rice cooker meal like this back in college. if you're living alone, have small appetite or easily bored eating the same things more than once, mini rice cooker will be your savior. some multipurpose sauce/spice from supermarket can also be helpful if you're not use to measure your sauce

    I really appreciate your guilt trip free advice. Everyone else just tells me im doing things wrong or not trying hard enough.
    Im a new mom with limited motivation and some days ita hard to just make sure my babies basic needs are met let alone cook or clean, im at home untill my mental health improves and im very lucky that my husband can support us even if its paycheck to paycheck some weeks. He is overweight and has several health conditions that are getting worse, we dint have the ability to cook and calorie count his meals when most days freezer pizza, chips and nuggets or oven meatballs max effort food either of us can do.
    I reach out to my family and friends group for advice, i planed on re budgeting and getting him on light and easy for 3 months so his meals and all the mental work, meal prep, and physical labour that goes in to making them would be taken care of my someone else. Instead of advice on how to maximize what i had to make it happen i got batch cook recipes and meal kit recommendation so i can do the work i cant do myself, and why aren't i grateful for the mounting of fried rice my MIL tried of offload on us that would clog up our freezer and i would have to eat as punishment everyday since food in the freezer is food my husband forgets exists..
    Im so tired

      Frozen vegetables! They're cheap, they're easy to cook and you don't need to prep them since they're already pre-cut and packed.
      Although I'm not a parent, I know the struggle of being exhausted and unable to cook any food, and just reaching for the frozen pizza or ordering unhealthy takeout.
      Since discovering frozen veggies I've been able to make healthy meals more consistently. Most of the time I just put them on a sheet pan, drizzle some oil and seasoning on them and put them in the oven to roast for like half an hour while I do other things or just take a nap. If I'm feeling energetic that day, I might even cut up some potatoes and add them to the veggies, and fry up some meat on the side. Other times I just toss everything in the oven (for example potatoes, veggies, chicken thighs) and let it do its thing.

      This meal is not that healthy and could make your IBS worse with all the inflammatory starch. The veg is fine but you should avoid the rice and it could stop the bowels from cramping up after digesting

    I do a one pot rice cooker meal of cooked ground beef, frozen spinach and wild rice. Season with anything. You can get fancy or just put in a couple of Goya seasoning packets. I cook up extra ground beef earlier in the week when I’m making tacos or something.
