Asam Pedas Ayam Style Johor

  • Salah satu signature orang Johor ialah asam pedas. Kali ini saya akan kongsikan resepi asam pedas ayam cara orang Johor yang mudah dan ringkas. Asam pedas ayam ni akan semakin sedap setelah ianya dipanaskan kerana kuahnya akan bertambah mesra dan pekat.

    BAHAN UNTUK DIKISAR:
    15 tangkai cili kering (rebus sehingga lembut & buang bijinya supaya tak terlalu pedas)
    1/2 sudu besar lada hitam biji
    2 cm belacan dibakar dahulu
    2 biji lada merah
    1 biji bawang besar
    4 ulas bawang merah
    4 ulas bawang putih
    1 inci halia
    2 ketul kunyit
    Anggaran 2 cawan air untuk mengisar
    6 ketul ayam/ 1/2 ekor ayam
    1 genggam daun kesum
    1 pokok bunga kantan
    1/4 cawan jus asam jawa - 1 sudu besar pes asam jawa + 1/4 cawan air
    Garam secukup rasa
    Gula secukup rasa
    Anggaran 1 liter air
    1/2 cawan minyak masak
    1 biji tomato belah 4
    8 ke 10 kacang bendi

    In this video, I'm going to share one of Johor's crowd-pleasing dish, which is called as asam pedas. I'm using chicken to make this savory asam pedas. It is so delicious to be eaten with white rice yet very easy to make, using fresh ingredients. The flavors of it's gravy will be better after reheated.

    INGREDIENTS TO BE BLENDED:
    15 pieces of dried red chilies (boiled until tender & deseeded)
    1/2 tbsp of black pepper seeds
    2 cm of dried shrimp paste (roasted)
    2 red chilies
    1 onion
    4 shallots
    4 cloves of garlic
    1 inch of ginger
    2 pieces of turmeric
    About 2 cups of water for blending
    6 pieces of chicken / 1/2 chicken
    A handful of laksa leaves
    1 torch ginger
    1/4 cup of tamarind juice (mix 1 tbsp of tamarind paste with 1/4 cup of water)
    Salt to taste
    Sugar to taste
    About 1 liter of water
    1/2 cup of cooking oil
    1 tomato - cut into 4
    8 to 10 lady's fingers
