Amazing, I am up in the blue mountains a lot. It is full of so many different scenes to capture. Not to mention the waterfalls! Might see you out there some day.
Your choice of aperture should be chosen for the creative effect that you would like to achieve. Shallow depth of field can be achieved by using a lower F/# (2.8,4,5.6) if you want to capture with the whole scene in focus use a narrower depth of field (F11,13,16)

Unless a waterfall has a ton of flow, I would always use a ND. Great video Scott!
