I made this and it is amazing! I took your advice and doubled the gelatin as I had a good sized watermelon. And I added 1C sugar. It has such a WOW factor and is delicious! The only issue I had, was that after slicing the watermelon it didn’t take long before the gelatin began to separate from the actual watermelon slice. I don’t know what caused that. Any ideas? I put the remaining half of the watermelon in the fridge overnight and the next morning when I sliced it all the gelatin pieces fell away from the watermelon rind. So wondering if anyone has any suggestions on how to make the fruit and gelatin stick to the watermelon rind.
Hi there, very happy to hear you have enjoyed the recipe. As for gelatin began to separate from the watermelon slices, a couple things I could think of is the recipe calls for a minimum of 6 hours in the refrigerator, but overnight would help. Also you will want to cut your watermelon slices wider at the base, as the weight of the Jello and fruit could cause the separation. As for the remaining half that was left in the fridge over night, was it covered with saran/plastic wrap? We found that it weakens the Jello, you may have to leave it uncovered or partially covered with a lid. Hope these will help.
Boiling water would be around 100 degree Celsius, or 212 degrees Fahrenheit. Or if you use a kettle, just wait for it to be ready. Room temperature would be around 20-22 degree Celsius, or 68-72 degrees Fahrenheit. Hope that helps!
I used two lg raspberry jello pkts as well as 6 plain gelatin. I used less water but apparently not enough less. I left it in fridge overnight and it was still so soft it would not hold its shape. I did not use any of the fruit she said not to use. It put the watermelon lid back on. I have no idea why I had less success than so many others. I had to scoop it all out into a bowl and we ate it with a spoon. Good but disappointing. 😮
Hi, Sorry to hear that, a couple of things that may help are 1. Use more gelatin, the more gelatin you use, the firmer the melon. Try 10 -12 packages of gelatin 2. When leaving the watermelon in the fridge overnight, try it without having the top of the watermelon covered at all, this will help the moisture to escape. Hope this helps! Wish you all the success.

Coriander is a spice. Colander is what you use to wash and rinse fruit.

From experience gelatin holds shape better! You will want more gelatin, otherwise fruits may collapse.

You do have to put it in the fridge to let the jello set
What gelatin did you use?
We used Dr Oetker Gelatin, 28g per packet, but you can use any brand, should all work.
