I have 10 of these trees. They do so well out here where I live.its very dry and hot here. I mulch/fertilize them a thick layer to keep the ground damp on hot days.

exactly my friend,
Jujube tree is relatively sensitive to the presence of calcareous compounds and in such soils does not grow enough and its fruiting is reduced. This plant is tolerant to salinity but not much and tolerates soil nutritional imbalances to some extent.

Yes, it is Ziziphus jujuba 'Sugar Cane' variety.
Well, between the three, you'd better plant fresh ones.
so
Fresh Jujubes grow most often (90%)
Ripe Jujubes are likely to grow (80%)
Dry Jujubes probably grow (50%)
