I am sorry but this recipe was not that good. The whole fun of eating baigan bharta is the smokey flavor it has. I think it is better to put a metal mesh on gas stove and roast on very low flame or but ghee on hot burning bowl and then put lid on top. There is no baigan bharta without the smokey flavor, this is just normal baigan sabzi
The brinjals are really small. Correctly speaking each brinjal should weigh 600-700gms and should be dark purple or almost black skin.We always grill them never boil them. No tomatoes only curd. Also you have not added spring onions, fresh green garlic. I will not be making this recipe.

Baingan ki subzi hai yeh. Bhurta khasiyat hai woh burnt smell. No dhaniya or zeera powder is put. And no lehsun either .
