The best way to sample the taste of batchoy in Iloilo, not just Iloilo City, is to taste the "unadulterated", no added condiments taste of the batchoy's broth. I suggest you sample different batchoys outside Iloilo City. Actually it's not the broth, but the water and the local secret ingredients used to cook the broth that makes Iloilo's batchoys taste "original". Growing up in the Lapaz market in the 70s, I've tried all the so-called "original" Lapaz batchoys; my favorites were Decos and Teds. Decos was my #1 because it had a jukebox, the batchoyan was clean, the broth tasted balanced (not too salty, not too MSG-ish), had the biggest floor area compared to all batchoyans, and was therefore visited by customers from all over Iloilo province since Lapaz had a train station back then. Teds was a "hole in the wall" batchoyan, therefore was small, but was frequented by the probinsyanos because of their cheap price points, and their batchoy tasted good and clean too, just like Decos. The best and easy way to sample the taste of batchoy in the Panay island is to have a rest stop on the town's plaza outside Iloilo City, find a batchoyan (hopefully you find a place with people eating inside, meaning it's a good place), and try their batchoy. For example, I like the taste of the batchoy of the batchoyan across the town's plaza from the Miag-ao Church. There was also a good batchoyan just outside the Dao's (Capiz) public market

The best way to eat Iloilo's puto is to pair it with dunuguan; batchoy only comes next. And the best way to eat "baye baye" is when the temperature is hot and pairing it with a super cold soft drink. In the outskirts of Iloilo city, you still might be able to experience the local "baye baye" vendors walking on the streets, carrying metal cylindrical containers, selling and yelling "BAYE BAYE DA!"
Para sa akin. Mas nagugustohan ko tinapay lang or pandesal sa batchoy. Mas bagay kesa sa puto. Yung puto naman mas bagay sa dinuguan. Ewan ko ba halos lahat ng kilalang batchoyan dyan sa iloilo kada uwi ko lagi na lang puto nakikita kong pinapartner. Kaya ginagawa ko bumibili rin muna ako ng pandesal or tinapay kahit buns para pang partner sa batchoy.
