    Extra Virgin Olive Oil (I used Private Reserve Greek olive oil)
    1/2 to 1 cup finely chopped carrots
    1/2 to 1 cup finely chopped celery
    1/2 to 1 cup finely chopped green onions
    2 garlic cloves, finely chopped
    8 cups low-sodium chicken broth
    2 bay leaves
    1 cup rice
    Salt and pepper
    2 cooked boneless chicken breast pieces, shredded ( about 6 to 8 oz store-bought rotisserie chicken will work)
    1/2 cup freshly-squeezed lemon juice
    2 large eggs
    Fresh parsley for garnish (optional)

    Hi Everyone! Just a short word, I'm aware that the Greek pronounciation of Avgolemono is Ahvo-lemono...the "G" is very lightly pronounced...somewhat silent and the accent is on the "le." Since most of us here are American, we're making it simple. Recipe is Yiayia approved, I promise :-) Let's enjoy the food and not worry about the words.

    Garlic is a seperate foodgroup for me.....lol. I love garlic too.
    I make my own pickled garlic and eat it for a snack.

    New subscriber. I’ve been reading through the comments. People get hung up over the silliest things, pronunciation and is it 💯 Greek or not. Just like every other part of the world, I am sure where you live in Greece depends on how you make the dish. It doesn’t make it less Greek than the version your family may have made. Recipes are meant to be adapted to individual tastes and traditions. If it’s not how you remember it being made then make it the way you remember it. To us American viewers who have never had or heard of this dish it looks delicious to try. I appreciate your time saving tip of using cooked chicken, even if that may not be traditional. I’m all about taking short cuts in the kitchen when possible.

    Hi, Suzy! The celery-carrot-onion mix that you started with is a staple in French cuisine for soups and stews and that chopped mixture is called "Mirepoix" (pronounced "Meer-PWAH". The X is silent). I don't usually buy chopped veggies, but I only use celery in recipes, so it often goes to waste. Trader Joe's sells Mirepoix in a see through plastic container for a very good price, which I find to be cost-effective. I had this delicious dish when I backpacked through Greece as a young man. Can't wait to try this recipe! Thank you!

    Avgolemono soup is just amazing & remindes me of my childhood .. i recommend you just only use the egg yolk, inständig of the Wohle egg .. and Before i put it back to the soup, i make sure to let it go through a strainer to remove everything from the egg .. and so its super smooth and extra delicious

    You’re making things very difficult on me.I love making large batches of soup on a Monday for my wife and myself. We love having healthy soup for the week, especially during the cold months in New England. I was prepared to make your minestrone soup and now I just discovered your Avgolemono soup. I will make one this week and one next week. My dilemma is which one to make first 🤔 I can’t wait to also make your Devilish- spicy shrimp recipe as well. Your Feta Party dip and Halloumi Fries may need to be made soon as well

      So glad you enjoyed it! Great idea regarding the olive oil video, there is a lot of olive oil out there and hard to find the right thing.     I love to add celery/carrots/daikon radish (chopped moderately fine) to the soup I make - my wife is intolerant to onions/garlic/peppers. The daikon cook into a 'feeling' similar to 'onions'!! A question: did your soup break in the photo above (and other parts of the video footage)? Noting oil around the edges is why I ask. Thanks for your wonderful videos - nicely informative and passionate

    Ah, Suzy. Things are looking grim in my household. I'm hesitant to blame you, yet you leave me no recourse.
    THE PROBLEM: I JUST found your website, the result being that you and your recipes used up the entirety of our remaining printer paper. The worst part is that my husband has a presentation to give tomorrow. I couldn't help it! I lost control! Did you HAVE TO publish only 100% delicious looking/sounding recipes? Could you have not put something truly mundane in there, like.... oh, I don't know.... plain toast, to quell my maniacal drooling and printing frenzy?
    He's. Not. Pleased. With. Me.
    So I'm going to have to start cooking some of these to get back on his good side. I'm guessing any one of the recipes I've printed would cast the appropriate spell and aid in removing that glare from his face.
    QUESTION: What's the best way to find garlic-heavy recipes on your site? (TIA!)

    I don't ever remember it being made this way. Being 100 perc greek I have a lot of my grandmother's original recipes they made back in the day. And there was never vegetables in it only chicken. To me this a version of chicken noodle soup not avgolemono soup

      Hi there Krisanthya! You can definitely omit the vegetables if you want, although I know some Greeks that add veggies to their avgolemono and it tastes great! Also, this recipe calls for rice and eggs, which are not typical in a chicken noodle soup. Enjoy!

      I disagree! I'm 100% Greek and my mom used me to help with the tempering. As she poured the ladles of broth, she would do this smacking of her lips as if blowing a long drawn out kiss! She also added big chunks of carrots and celery, after boiling the chicken she would shred and add in there. And that was her 100% Greek way. I've had this soup at family's similarly. Oh and yes, accent on the LE in avgolemono. ;-)

      I guess we can agree to disagree then. Every recipe is adaptable to one’s own taste. My moms falafel recipe is different than the street merchants in Cairo. But they’re both Egyptian recipes. No conflict there. And yes, I know I mispronounced avgolemono. I guess that sort of thing is bound to happen since Greek is not my native language. But at least I tried! And by the way, LOVE Greek cuisine and am proud to share Greek recipes to non-Greeks around the world 🙂
