    My great grandmother was known as the "chow fun lady". She made her own noodles and went from door to door selling chow fun. This was in the late 1800's in Hawaii.

      Amazing. Never heard anyone talk about her. That's about the time both my grand fathers came from China. I wish I had an earlier interest in cooking. I had one aunty who was a whiz at cooking and unfortunately she got sick so I never learned how she made these football shaped gin dui that was so hollow, not doughy, and stayed crispy for hours.

    I made this dish, for a birthday party. It doubles easy! It was a hit!!! Everyone enjoyed how ono it was. No leftovers shucks!! I just have to make more next time.     Oh my goodness! My mouth is watery! I remember going to the Char Hung Sut on Pauahi Street for their fresh Chow fun and going to the Lookfun Shop at the Kekaulike Marketplace on King Street in Chinatown for fresh Look fun. Now, living in West Texas, I’m missing my food of home. Thank you for showing me how to make this!

      You're welcome. Hope you can get the supplies there. Nowadays, most states have Asian stores. When I went to school in Kansas, there was nothing but lots of La Choy products which I hated.

      Use char siu for anything, part of a meal, any noodles, won ton mein, fillings for char siu bao, etc.

      My favorite store is Canton Market, mauka on King Street. It's small but they have almost all the dry goods I want and often times cheaper.

    Great Recipe! Gonna look at Asian markets here in Virginia for fresh/packaged Look Fun noodles. Used to be could only find dried ones that you had to boil and then put in the chow fun. So, extra steps. Maybe next you could do Hong Kong noodles!

      @@HawaiisPickleLady I had some at a shop on River Street several years ago. Very thin wheat noodles, I think, fried with a shoyu sauce and meat of choice added; including tendon and tripe.     My favorite dish ! I like learn for making chow fun noodles. I don’t know where to find it over here. They mostly do like the yakisoba noodles ( yes, locals would be laughing) or chow mien. Oh yummy lup Chong. Good thing it’s dinner time. Or I’d be going shopping to make some...and figure how to do the noodles. Just not the same . Good chow fun is either down by someone’s poppo or in Hawaii. Cant beat those noodles. ❤️

    That was fast, easy and looks delicious! What would be the sauces and condiments to have on hand to make several different dishes? I know there must be a list of condiments you cant do without.

      There's so many sauces possible, straight soy, oyster sauce, lemon, sesame oil, various hot sauces, etc.

    Oh that brings back much memories of home. We used to buy chow fun, manapua, pork hash, and rice cake from libby's in Kalihi. In Kalihi at Lanakila Housing used to have this old Chinese man selling manapua, pork hash and my all time favorite the diamond shaped sticky rice cake. This was in the mid 1960's good times for sure. Mahalo Aunty for keeping the memories alive. Aloha from Kansas

    One of the suggestion of wok cooking is not to over crowd as demostrated here. It leads to uneven cooking in stir frying.

      Don't know about aluminum, probably hard to upkeep. Buy a good one and you won't be sorry. You need to season it, wash and dry it, then lightly oil. Look on You Tube how to do this. Don't buy nonstick. Try 555 Market on Kekaulike Mall and King Street. It really becomes non stick naturally.

    I’m in Vegas too. I’ve recently begun cooking with a wok. Where did you get the rice noodles? 168? And which Costco did you find the sausage? Summerlin? I’d really also like your recipe or guidance on making char siu...thanks!

      Rice noodles are available at any of the Asian stores: 99 Ranch, 168, SF Market, Greenland. I go to the one on Decatur. Very cheap and good brand, 2packs over a pound for $11+. If you buy it individually it's under a pound and much more expensive.

      Look at facebook, I name 3 places, Yat Tung Chow on King Street between Kekaulike and River on the mauka side. This is the only one in Chinatown. There used to be. Young's Noodle Factory on Liliha Street above School Street. Oahu Noodle Factory on King Street in Kalihi next to Bank of Hawaii after Farrington High School. There's also Chun Wah Kam with several locations (look it up). I like to use Hong Kong Chow Mein cause it's thinner and soaks up more flavor.

    I bought fresh rice noodles to try and make this. It says on the package “refrigerate after opening”. How long are these noodles good for? I love your recipes! So easy and tasty. Thank you!

      You can keep it a few days but it tends to harden so steam it few minutes. It doesn't freeze well.

      Just made chow fun yesterday. I had bought the noodles from Chinatown a week ago and refrigerated it. Wasn't sure if it'd work out. I heated my wok, put a little oil and swished it around and slid the noodles (stuck together), poured a little water in, covered it and let it steam for10-15 minutes, turned it over and carefully separated the pieces, covered and let it soften again. It came out so good, like fresh. I removed the noodles then added my homemade char siu, lup cheong, cooked in water for about 10 minutes, bean sprouts and green onion. Added little sesame oil and oyster sauce and it was a hit. Note: I notice that the lup cheong had lot of white particles so I rub it all off under water. Must be some kind of chemicals. We are guinea pigs eating whatever tastes good. Got to research about that white stuff all over the sausages when cooked.

    This must a Hawaiin version of the Chinese Chow Fun. I've been eating Chow Fun at different Chinese restaurants here in the States for many years, and none I've seen Chinese sausage or BB Pork being used for the dish. Instead, slice beef and shrimp are often used in Chow Fun.

    I use to buy the same package of noodles but they become dry because you keep them in the refrigerator for couple of day I usually microwave them to little soft but they become very scrambled and no longer firm any other way please

      You might try steaming but not too long as they are fragile. They do not freeze well. Hawaii has the look funn factory on Kekaulike Mall. I like theirs the best. In Vegas, I get it from the Asian stores in packages from LA and best to use it right away.

    Chinese from different parts of the world cook Chow Fun differently, e.g Malaysian's Chow Fun, everyone favourite is known as "Wan Tang Hor" is very different from that above. There is NO right or wrong way, when the Chinese migrated overseas they tended to modify the dish to accommodate the ingredients available in those areas, etc. Enjoy.

      I always say there's no original recipe. I'm constantly changing my recipes. It's a challenge to create new things. I'm happy when people say they are learning new things.

      @@HawaiisPickleLady Yes. Besides there are MANY recipes under Hor Fun, another eg, Beef Hor Fun, it depends which one you prefer and enjoys eating.

      It's the same formula, just slice some good beef (top sirloin, tenderloin) and marinate a few minutes with soy, sugar, sesame oil, ginger and garlic and proceed as usual.

    How do many servings does that represent? Seems like a lot. 4 to 6 people? That would take care of me for dinner for a month. My doctor likes how my weight is going.

      You can cut down the amounts. This may serve 8-10 people depending how many other dishes you have.

    Too heavy on vegetables. I love slightly greasy chow fun, but with noodles, bbq pork and green onion dominant.

    This is too big a dish to feed a small family. The chow fun is like stir fry without the hot heated wok favor. I learned from the chef to loosen up and separate cold rice noodle by microwave and do quick stir fry with chopstick so that the noodle hold the form a bit better. Use oil only as water moisture will break up the noodle.

      Thanks for the tips! You can always cut down my recipes. Look fun does not do well refrigerated or frozen, best to use it fresh. Microwave or steaming makes it fall apart.

      @@HawaiisPickleLady Yes, fresh is the best. I live in Iowa and don't get the fresh rice noodle from big cities - west coast or east coast or Chicago or Houston. Therefore rice noodle is solid rigid in chill temperature. Microwave saves time. I found out one manufacturer suggests to put the whole bag in the hot water to warm up as his noodle will glue together thru microwave. steaming is best of all.

    Since you can't throw the wok, you'd be better off using two spoons to mix the ingredients.

    The fire is too weak to cook such a large batch of rice noodles. You either need a much stronger fire and larger wok, or cook a much smaller batch of noodles with the existing fire/wok to achieve a good level of wok hay like in a typical Cantonese restaurant kitchen

      You could divide it but it turned out all right. As long as I could handle it, didn't go out of the pan.
