HDMI won't work while driving due to safety reasons . The same way you can use it for Google Chromecast as well. But no benefits basically since handbrake should be on to use all these features.

How to play the fire stick while driving
There is a handbrake bypass circuit which can be fitted to Digipad without cutting or altering the wiring. I have done it for my Digipad (Honda city)

You can bypass the handbrake with a toggle switch or simply hook the handbrake wite to the ground wire and it works while driving
