When laying 2” pipe I like to use a 2” brass saddle for the tap in the PVC. You don’t have to cut the pipe and mess with glue up plus the saddle is female thread to receive your 3/4 compression fitting.
COMPLETELY agree on the stainless steel stiffener insert. A few years back I made some good money going around an entire apartment complex pulling 2 " water mains apart and adding that stiffener that the original plumbers neglected. They had about 3 or 4 of them blow apart, and believe me, a 2" main with 70 PSI puts out a lot of water when it comes apart. I will say that while you can usually get away with it, I would use a Schedule 80 PVC nipple into a female brass fitting, not a male brass fitting into a PVC female fitting. I occasionally get to make good money repairing water mains when the female PVC fitting splits years after installation.

In Idaho we use 4' buried hydrants. I won't use anything but Woodford hydrants, made in Colorado. I have 'overhauled' some using their kits so you don't have to dig up and replace the whole hydrant. Woodford is a great company and they are always improving their products!

Pipe dope on plastic fittings? Id use teflon tape if it was mine.

Use both at the same time. That seems to ensure you don't have leaks.
