    What’s the purpose of the skewers if you are going to tie the meat anyway and why not season all at once?

      I run out of butcher twine that's why I used the skewers at first, went out and got me some strings and got rid of skewers ....I like to dry brine meat with salt only and only season with pepper and garlic right before cooking.
