Appreciate your videos. I've been looking at the OCGS for several months now. I'm in a similar situation (I likewise own the OC Brazos & a Camp Chef pellet cooker). Think I'm going to pull the trigger on the OC Gravity Smoker this weekend. I ordered a Tel Tru thermometer w a 6 inch stem earlier today. I'm also looking at various casters to replace the originals. Thank you for the kind words and comment. I highly recommend this OC gravity smoker after using it for a bit now. I have done ribs and brisket on it (videos forthcoming either today or tomorrow) and I am officially a believer. I would say that you might consider a 4" stem for your Tel True - that's what I'm going to replace the one in the video with as I had to return the 6" stem one that I bought (the one in the video is 2"). The 6" stem will definitely work, but it'll just protrude pretty far into the chamber and could potentially hit whatever you've got on there at 6." Let me know how it goes for you, and may your smoke be clean and smokey lol.
@@lordsaunderssmokehouse I wondered about the 6, however, another gentleman (another channel) that also has that smoker suggested going with a 6 inch stem. I'll definately swap to a shorter stem if it gets in the way. Thanks for the advice!!
Sooo, picked up my OC Gravity this evening... going to clean it and then season it tomorrow. Again, thank you for the videos, helped sell me on this cooker.

Sure, they're 23.5" wide by 15.5" deep on the top shelves, and 21.5" wide by 15.5" deep on the bottome.
I noticed your thermometer probe needs to go further in your cooking chamber.
Yes! lol thank you for the comment - I swapped that out after this video for a longer stem and it was MUCH better.
