Don't listen to those who says not to follow the series. The diversity in Odisha is unmatched in different area,language,speaking style,food keeps changing place to place. There is no state where you will find a famous food for every district as you will find in Odisha and most or all of them are authentic. This is the only person who made video travelling most part of Odisha although covered around 30% or so. There are rest 70% full of natural beauty. In this series you will not only see different food but also different natrual beauty,tradition,people,dance,dress,art etc. Instead of watching other videos, I would suggest you watch this series and you would not regret. The only series that covers the glimpse of Odisha

I lived 25 years at Berhampur before shifting to Bangaluru. The food varities here at Berhampur are the best in all over India.
One of my friend is from Hyderabad and he gave me chicken pickle 😅 I fell in love with it. I'm from Maharashtra and in my home we do mango pickle, lemon pickle, green chilli pickle, mango and green chill mix pickle 😅 I'm sure there are many different types of pickles in Maharashtra alone rest i need to discover 😂

First item- Kobi pakoda. I regularly make that at home for my late mother who did not eat onions and garlic. So kobi pakoda is another altenative. Kobi in odia which means gobi in hindi. Phula kobi(ful gobi) and bandha/patra kobi(patta gobi). I will upload video on my channel. Every area of Odisha has own type of culture and food. You can find north Indian, south indian and traditional odia food. We also have many unique food like pitha and mitha.We also give Odia and different touch to many cuisines from other areas,states,countries.
Second item- That red colour curry type with vada in it is called-sambar vada. That is vada dipped in sambar. It has it's own unique taste. Pasaruni leave has a strong smell but its juice is good for health
Third item- Odisha produces many mangoes and fishes that includes river fish and sea fish. Everything is not sold. But Odia people are good at conservation, they would not waste food because wasting food is considered as sin as food represents Goddess Laxmi and her wrath will fall upon you. So what we do is we squeeze the juice of ripe mangoes and make jelly from them by either adding sugar or gud. Sugar ones look yellow and gud ones black. These are called-Amba sadha.Also the inside shell it made 2 parts, taken the seed out and dried to used later- That is called Ambula which goes well with pakhala(another way of preserving rice by adding water,leaving it overnight to eat. That is called basi pakhala(tangy sour taste) and now they have fresh pakhala,cooking rice and adding water to it). Just add water to the dry mango,crush some green chili,garlic and add little bit of salt and some water, that goes well with plain rice and even pakhala. Also another dish is made from it using mustard gravy and gud. That is called ambula rai(any item made with mustard paste,then rai is added to it like mushroom,fish etc). As you mentioned alu bukhari, now not being a part of feasts,lunches etc but ambula rai is making a come back and in most marriage reception parties, it is a side dish along with salad. Also pakhala now had made huge comback as earlier it was considered as only food for the poor or working class working in fields due to hot summer. Now even 5 star hotel serve pakhala and pakhala divas is there I thin 20 March every year.
Fourth item- As per pickle we have many varieties. Mango-sweet and chilly,lemon-sweet and chilly, starfruit- sweet,berry or ber- sweet and chilly,khajur-sweet,tomato-sweet and many other items you might not have heard about. As per chenna, it is the most used item in making sweet. The best among them is Chenna poda and rasagola(origin traced back to puri temple, 13th century when lord jagannath comes back to Puri temple, goddess laxmi is angry why you left me for so many days. Lord jagannath offers rasagolla that was called Khiramohan then to make her happy). If you visit Odisha even for 3-5 days, you can visit Puri,Bhubaneswar and near by areas staying at bhubaneswar. 5 days would be a decent trip-2 days city tour,2 days outside and 1 day reserve. Do all the shopping at cheap prices, eat varieties of food/
Odisha is the inventor of ancient food items . 1000 types of food items are available here. Maximum food items were taken and being adopted in other states.

Dahi Chilli acts as a snacky item for lunches just like papad; they are not at all spicy after being soaked in curd and dried but are very crispy like chips. Odia people love eating green or red chillis directly during their lunch or dinners. These people are one of the spicy eaters with very good spice tolerance
