    i must ditto what Justin just said. i'm 66, been cooking all of my life, rarely eat out anymore, have owned 3 restaurants and cooked in many more. let me say, we, y'all are lucky to have this channel and this guy to learn from. he knows what he's talking about without any attitude. his instruction is succinct and he keeps it simple, explanations are great. he's focused and his intent, to teach you and help you, is obvious and greatly appreciated by me who also loves to teach!     I would qualify myself as a PRETTY qualified at home chef. With that said, there are 2 recipes that have made my husband say "Oh my god, this is so good." This is one of those recipes. Thank you for not only this recipe but the knowledge that inspired research around browning/braising/etc. You rock!

    For anyone really wanting to know. This is the best thing I've ever put in my mouth. Also, I have watched and made every single Gordon Ramsey dish on youtube and eventually you run out and need to find someone else to learn from. I have found a few here and there that were just eh, but when I found this channel and tried some of the dishes I new this guy was legit. The Penne ala Vodka is to die for and I am making philly cheesesteaks today. Keep em coming dude. Awesome work!

      Making this for the second time today. Also did the Pasta with Bolognese Sauce...Holy Cow! Got rave review over the ziti and penne with vodka. Have onions pickling in the refrigerator. This guy knows what he is doing and had a great teaching style. And the food!!!!

    making this tonight! i found your channel on monday and this is the third recipe i’m making this week! i made the roasted summer tomato sauce, weekday sauce with meatballs last night was AMAZING! the meatballs just melted in your mouth. my husband loved the sauce, he said don’t try to give him jar sauce ever again lol. my short ribs are in the oven now and smell delicious! i really love your channel and i appreciate the time you put into your content. i’m not a huge cooker lately (39 weeks pregnant), but you’ve really inspired me to cook again. i love that your recipes aren’t just recipes you educate us on why you’re doing things the way that you’re doing it, or why it’s important to use specific ingredients. thank you and can’t wait to try the rest of your recipes!

    This recipe is the TRUTH! Incredibly flavorful, and the ribs literally fell off the bone. I used an Instant Pot, and the taste was just as if I had it in the oven for hours. My husband was a very happy man with this dinner. Thank you so much for sharing your gift with us.

    Ok. Thank you. This was delish! Made it today and only one misstep --I threw in the reserved drippings from the frying before putting it in the oven - I don't know what I was thinking. I had more oil to scoop off the top and the consistency of the sauce was a bit thicker but no problem. I also decided to let it sleep overnight so I will make the potatoes tomorrow instead. Thanks again.

    Made this for me and my girl yesterday and it came out fantastic. For sure one of the best things I’ve made. Really appreciate your content. I like that a lot of your videos are centered on teaching techniques and not just recipes. I’m not an experienced cook, but I’ve realized very quickly that learning techniques is much more important than learning recipes.

    When my sister made this for us at the restaurant it was one of the best meal i've ever had. amazing flavors, then she makes it now for me on my birthday. she makes it with parsnip and i love it! Now my sister is not near by. love this video so simply explained.

    I used your short ribs recipe/process and then made your food truck sandwich with the leftovers and they were both amazing. After I refrigerated the leftovers I skimmed the fat layer off and put it in a small jar so I can reuse it in my next braise. FLAVOR COUNTRY! I also watched a lot of other braising videos but yours was the best quality by a long shot.

    Mine are in the oven right now!! Everything went smooth. I did get my ribs at a high quality meat market but they only had bone in. I’m sure they will be delicious. I have seen many recipes for this but yours is the first that looked easy enough to try.! New subscriber!

    Made these last night and they were so so good! Had braising liquid left over (only had three short ribs) and will use that for a beef stew later this week. Flavors are on point!

    Hey man, thanks again for another recipe! Question: is there a benefit to wiping out the oil/fond before cooking the vegetables? To me it seems like it’d take away a little flavor, but I didn’t know if there’s something I missed.

      I think it would be too oily if you don’t drain the oil from the short ribs. Alternatively you can skim the oil later on but a little more work.

      I agree, I wouldn't drain the oil and wipe it clean. Once ready I remove the short ribs (shred or keep whole depending on preference), I then use a mesh strainer to strain out the veg and your left with just the liquid - during baking I keep it covered so it doesn't reduce so much. I then take a large bowl with bunch of ice and pour the liquid in and toss it in the fridge. After 30 minutes or so I shim off all the fat/ice on the top. I then put he liquid back in the pot and bring to a boil reducing and intensifying the flavor. Once it's down to a 1/3 remaining I turn it off. When ready to serve I just pour how much I need in a sauté pan and get it boiling/reduced further until it's getting thick and place the cold short ribs back in to warm up. The ribs taste just like they did when they were first made.
