Although I can tell you that that the image had a lot of sunlight so that created some problems so if you use a different reference image make sure that it doesn't have too much sunlight or lack thereof...

26:24 ◾ Select all the paths you want to color > Pathfinder > Divide ( First one, bottom row ) > Right click on your selection > Ungroup > Now you can select individual parts to color.
