I use both! I butter my griddle.....then put mayo very thinly on the bread, and put it mayo-side down on the buttered griddle. When browned, put mayo on top side of bread and flip it. Then when you put the cheese on the already-grilled side of the bread....the bread is hot and will melt the cheese faster. This way you'll get the buttery taste from the griddle......plus the crispness of the mayo! It's a win-win situation!!! 👍😉
Ive been converted to mayo from doing cooking demos at costco. Ive upped the game at home and add garlic powder to the outside with colby and pepper jack for the cheese. Looking forward to trying on the Blackstone soon

Mayo’s secret - it doesn’t brown/burn as fast. It’s a slightly different flavor but it gives you more working time on the griddle to get a better melt of the cheese (without having to use a dome).

One side -spread butter, grill to Golden brown and a bit crisp. The other side, spread mayo - same (grill to Golden brown/crisp). Put cheese in the middle (speeds up the melting process too). Set on griddle or grill for short time. Boom. Done. The end 👌🏼

I would always choose Butter over Mayo if it were strictly on taste. I have gone through periods where i was watching my weight and would choose Mayo just because it is a more healthy option. You know I NEVER thought of putting mayo on a grilled cheese sandwich until you did something like this before and used mayo and I thought I would give it a try. It was not bad, but I would have to agree that butter is the BEST. It does add that good butter taste to the bread and blends well with the cheese. I also liked the idea of butting butter on both sides. I will have to try that next time. I bet that would even bring more of the butter taste out. But like you said...you just do not want to leave them on the griddle to long and burn your buns. I have always said you don't want to burn your buns. What I find truly interesting is the 2 different cheeses as I've always, since I was a kid....only had white American cheese on mine. Now let's get to the butter vs. Mayo. I like to see that butter is better as I'm not a fan of mayo in sandwiches but it's nice to also note...in a pinch it can substitute for a grilled sandwhich. Yup, I'll comment. Done both, and really prefer the butter. Mayo is oil, and ends up tasting like I cooked it in oil. Now, for the butter, I actually use "Smart Balance". It really IS a margarine that cooks like butter. More importantly, man, when grilling any bread, it actually taste's better than butter, and is very easy to control, because I love mine golden, wife likes it a little charred. What I'm really curious about is why you put oil on the griddle before cooking butter or Mayo. It would then technically be grilled in oil. Love you guys.

In all honesty, I can’t speak to the oil - the only thing I can think of (this was from last summer), is that we may have just reseasoned the griddle, and maybe thought we needed it to keep from sticking?!🤣 but we are totally with you - we prefer the butter hands down for grilled cheese! Never used mayo on a grilled cheese. I am sure the type of mayo used would make a difference. In my opinion Dukes is the best. In fact we don't even say mayo we say Dukes.

My wife prefers butter, I like mayo. When I'm making the grilled cheese on the griddle, i find it is easier and quicker to lay that butter down on the griddle surface and melt down. I spread the butter around with the spatula, lay the bread down and then take that spatula butter and rub it on the tops of the bread and then flip it so I toast both sides before applying the deliciousness that is the cheese.

I make mine with Butter, I've tried Mayo too many times, because I also make Patty Melts a lot. We prefer Butter, I melt the Butter in the Microwave with a shot of Garlic Powder and brush it on. My kids and I actually like my Mom's Grilled Cheese...she uses Miracle Whip. I grew up with her Miracle Whipping EVERYTHING, so I will NEVER buy it....but it does make a Great Grilled Cheese.

I keep hearing this, but is it too much butter? I imagine this is good for when you have thicker bread though. Like fresh bread... you just can't cut it as thin as pre-sliced, then the ratio of butter, cheese, bread gets all wonky.

Don't even have to boil the dogs- slice 'em up & fry 'em til they're the way you like them!! But these are just some of MY comfort food suggestions =) !! BTW- Never heard of adding water to cooking grilled cheese =0 ! THIS may help my bad habit of either burning one side or crisp8ng both sides PERFECTLY, then having to slice it in 1/2 & nuke it for 15-30 seconds to thoroughly melt the cheese correctly!! Can't wait to try it !

The edges are the best... so salty and Crunchy... so good. My dog agrees lol, gets really mad if I don't share with him. Gives me the stink eye. I don't use a lid or steam either, don't want anything messing with the crunch. Just cook it lower and slower. Works better, in my opinion. Only use steam if I use a lot of cheese, like for my brother, but then I crisp the bread up again to make sure it's nice and Crunchy. And now I really want a grilled cheese 😆
The only reason to use mayo is if you're out of butter or don't have soft butter on hand. Butter is such an essential component to the flavor of a grilled cheese. Mayo adds saltiness, but butter adds a rich, nutty sweetness to it. Butter on bread > mayo on bread > butter in the pan

Agreed, simple is better. If I add anything other than American, it's Muenster. My brothers like Swiss. Fresh bread is good too, but for some reason I almost like the cheaper bread better. Gets more butter soaked I think 😆. Kind of depends on my mood because a classic grilled cheese and fancier one are totally different beasts. Either way, can't go wrong pairing it with tomato soup. My cousin used to eat them with ketchup. That's not the worst, but soup is best. Ahh... I'm so hungry now lol
I like both. I see butter as good, and mayo as good. For me, it's what mood am I in??? They each have their own flavours. For me it would be like saying which cheese is better?? What I find truly interesting is the 2 different cheeses as I've always, since I was a kid....only had white American cheese on mine. Now let's get to the butter vs. Mayo. I like to see that butter is better as I'm not a fan of mayo in sandwiches but it's nice to also note...in a pinch it can substitute for a grilled sandwhich. You can use mayo for the crispness and then butter the pan and put the sandwich back on the griddle to get the butter flavor!

Yup, I'll comment. Done both, and really prefer the butter. Mayo is oil, and ends up tasting like I cooked it in oil. Now, for the butter, I actually use "Smart Balance". It really IS a margarine that cooks like butter. More importantly, man, when grilling any bread, it actually taste's better than butter, and is very easy to control, because I love mine golden, wife likes it a little charred. What I'm really curious about is why you put oil on the griddle before cooking butter or Mayo. It would then technically be grilled in oil. Love you guys.

In all honesty, I can’t speak to the oil - the only thing I can think of (this was from last summer), is that we may have just reseasoned the griddle, and maybe thought we needed it to keep from sticking?!🤣 but we are totally with you - we prefer the butter hands down for grilled cheese! My wife prefers butter, I like mayo. When I'm making the grilled cheese on the griddle, i find it is easier and quicker to lay that butter down on the griddle surface and melt down. I spread the butter around with the spatula, lay the bread down and then take that spatula butter and rub it on the tops of the bread and then flip it so I toast both sides before applying the deliciousness that is the cheese.

I make mine with Butter, I've tried Mayo too many times, because I also make Patty Melts a lot. We prefer Butter, I melt the Butter in the Microwave with a shot of Garlic Powder and brush it on. My kids and I actually like my Mom's Grilled Cheese...she uses Miracle Whip. I grew up with her Miracle Whipping EVERYTHING, so I will NEVER buy it....but it does make a Great Grilled Cheese.

I keep hearing this, but is it too much butter? I imagine this is good for when you have thicker bread though. Like fresh bread... you just can't cut it as thin as pre-sliced, then the ratio of butter, cheese, bread gets all wonky.

The edges are the best... so salty and Crunchy... so good. My dog agrees lol, gets really mad if I don't share with him. Gives me the stink eye. I don't use a lid or steam either, don't want anything messing with the crunch. Just cook it lower and slower. Works better, in my opinion. Only use steam if I use a lot of cheese, like for my brother, but then I crisp the bread up again to make sure it's nice and Crunchy. And now I really want a grilled cheese 😆

The only reason to use mayo is if you're out of butter or don't have soft butter on hand. Butter is such an essential component to the flavor of a grilled cheese. Mayo adds saltiness, but butter adds a rich, nutty sweetness to it.
Butter on bread > mayo on bread > butter in the pan

Agreed, simple is better. If I add anything other than American, it's Muenster. My brothers like Swiss. Fresh bread is good too, but for some reason I almost like the cheaper bread better. Gets more butter soaked I think 😆. Kind of depends on my mood because a classic grilled cheese and fancier one are totally different beasts. Either way, can't go wrong pairing it with tomato soup. My cousin used to eat them with ketchup. That's not the worst, but soup is best. Ahh... I'm so hungry now lol
I like both. I see butter as good, and mayo as good. For me, it's what mood am I in??? They each have their own flavours. For me it would be like saying which cheese is better?? With the exception of blue cheese, there's not a cheese I've eaten and not liked. (Hate blue cheese for the record, and it doesn't like me much better 😂)
