A tip I learnt from Alton Brown's Food Network program Good Eats. Take only about 10 one inches( aprox) pieces of cooked meat and put in blender/ grinder. Use short pulse of 1-2 seconds no more than 9 to 10 times. You get perfect result for traditional Shammi Kebab. Repeat the procedure for rest of the meat mixture it gets done very fast and gives the perfect texture. If you pulse the grinder 12-13 times it becomes a paste, key is just 10 one inch pieces of picture and just about 10 1-2 second pulses. It's like magic.!! By the way you are too young to know the original texture of Shammi kebabs going by your recipe, of egg, excessive dal etc. A perfectly ground mixture will never need any egg or til for staying together or for crunch. I lived in 11 cities in India and 5 abroad and have had old people eat shammis in my house from every area of subcontinent. The unsolicited response almost always is this is what it used to taste when our mothers/ grandmother's used to make. Im old enough that as a kid and teen all homes very rich, rich , middle class or poor the main fuel used for cooking in homes was wood and very occassionally kerosene stoves. Needless to say electricity was used only for lighting , fans and radio even refrigerators were not used in India then.

Can I use qeema instead of using whole meat
lachay daar kebab nahi banaye gy with qeema but kebab ban jayegay. the meat gives it texture
