Today, I'm excited to share with you the secrets of making the Adra Special Thali, a traditional Bihari thali that is not only delicious but also deeply rooted in the rich culinary heritage of Bihar. This thali is a perfect blend of flavors and textures, featuring:
Dalpuri: A flavorful stuffed flatbread, crispy on the outside and soft on the inside.
Kheer: A creamy and luscious rice pudding, sweetened to perfection.
Vegetable Curry: A savory vegetable curry, bursting with spices and aromas.
Mango: Fresh, juicy mango to balance the savory elements with a touch of sweetness.
In this video, I'll guide you step-by-step through each recipe, sharing tips and techniques to help you recreate these authentic Bihari dishes in your own kitchen. Whether you're familiar with Bihari cuisine or trying it for the first time, this thali is sure to impress your family and friends.
Ingredients:
Dalpuri:
Wheat flour
Split yellow gram (chana dal)
Cumin seeds
Green chilies
Salt
Oil for frying
Kheer:
Basmati rice
Milk
Sugar
Cardamom powder
Dry fruits (almonds, cashews, raisins)
Vegetable Curry:
Pointed Gourd
Potatoes
Onions
Turmeric powder
Cumin seeds
Coriander powder
Garam masala
Kasoori Methi
Red Chilli Powder
Kashmiri Red Chilli Powder
Cumin Powder
Black Pepper Powder
Salt
Oil
Mango:
Fresh, ripe mangoes
Instructions:
Prepare the dough with wheat flour, water, and a pinch of salt along with cumin Seeds.
Boil the Split yellow gram and strain.
Cook the chana dal with cumin seeds, and green chilies until soft.
Mash the cooked dal and stuff it into small dough balls.
Roll out the stuffed dough balls and fry them until golden brown.
Kheer:
Wash and soak the rice.
Fry the rice in desi ghee for about 3-4 minutes
Boil the milk and add the rice, Cook until it becomes tender.
Sweeten with sugar and flavor with cardamom powder.
Garnish with dry fruits.
Vegetable Curry:
Heat oil and add cumin seeds.
Fry The Pointed Gourd.
Take out the pointed Gourd.
Saute onions until golden.
Add Boiled Potatoes, spices and cook until tender.
Serving the Thali:
Arrange the dalpuri, kheer, sabji, and freshly cut mangoes on a plate. Enjoy the harmonious blend of sweet, savory, and spicy flavors.
Tips and Tricks:
For extra fluffiness in dalpuri, rest the dough for 30 minutes.
Stir the kheer continuously to avoid sticking.
Saute Rice For About 3-4 minutes for better taste.
Adjust the spices in sabji according to your taste preference.
