Hinuhugsan ko muna ng maigi ang ampalaya bago hiwain ng medyo makapal pero hindi ko na ito binababad sa tubig na may asin sa dahilan na nawawala o di naman kaya ay nababawasan ang sustansiya ng gulay.

There's no problem of putting some salt, some people use to parboiled it first before cooking it's because Bitter gourd may contain alkaloid substances like quinine and morodicine, resins, and saponin glycosides, which may be the cause of intolerance in some people. Their bitterness and toxicity may be reduced somewhat by parboiling or soaking in salt water for up to 10 minutes. Toxicity symptoms may include excessive salivation, facial redness, dimness of vision, stomach pain, nausea, vomiting, diarrhea, muscular weakness.
