    Ayam percik is tastier if you grill on charcoal. It will give you smoky taste. You can also add gula melaka/ nise on the gravy as Kelantanese dishes are usually creamy and sweet.

    So rajinlah ichang..preparing n cooking the chicken for 5 hours...some people say..why bother cooking it for hours if you can buy it cheaper than cooking it at home..but ichang i salute you...you are a very patient person when it comes to cooking..

    I can definitely differentiate a Malaysian and a non-Malaysian just by looking at how their hands are when eating rice with hand. And to be fair, you guys must be a true Malaysian deep inside your soul. The resemblance to us here is uncanny. People will be truly shocked when you come and eat here again one day. Trust me 👍🏻

    Ayak percik is mostly popular in Malaysia during Ramadan. A lot of people sell this dish in Bazar Ramadan. I hope next year, you will get the chance to visit Malaysia during Ramadan, the fasting month 😊

    The way i cook Ayam Percik , i boil the chicken together with the sauce until 90% cooked all through, then i baked the chicken in the oven or grill on open fire, i continue to reduce the sauce until thick consistency and the red oil has risen…. Add pandan into the sauce too while cooking the chicken

      Agreed Traditionally way. Ichang & Jimmy can put a small charcoal in the aluminum foil during 2nd time grill to give smokey flavour to Ayam Percik. Don't let it be too oily

    Ayam Percik - one of my favourite dish. For me and my wife, sometimes we use fish instead of chicken, grill and add the sauce little by little until fully cooked. Of course the smell and taste a bit different using charcoal grill vs oven. Anyway the sauce looks very nice, and yes it should be thick like that. For the chilli paste actually its optional, since dishes from Kelantan usually sweet. For calamnsi, i think its called limau kasturi in malaysia, and can be replaced with asam keping. Congrats.

    Kelantan spicy food is sweeter in taste than other states. While Negeri Sembilan spicy food is the most spicy than other states.

      That thing came in my mind, if Kelantanese teach us how to cook in what ever medium they use (YT, FB, IG, etc), did they use the true Kelantanese recipe (overly sweet), or they tone down the sweet to suit with another Malaysian taste bud.

      @@akaizatyusof usually its depends on their own taste. Azie's kitchen used authentic kelantanese recipes, however it's not overly sweetened the dishes, just nicely well balanced meals.

    a few thing you need to know about ayam percik kelantan… the original one not using too much turmeric… only version from Pahang using that much turmeric… the kelantan style of ayam percik more to pinky colour…. that colour came from combination of chilli paste and fresh santan… and chicken need to steam first to pushing its marinate flavour beyond to chicken bond before grill… the way to cooking ayam percik kelantan is using charcoal grill because we need FULLY COATING every layer to gain more delicious taste from sauce…at least you need to repeat process (3 times) of coating and grill before to serve….the best way to eating this ayam percik with Nasi Kerabu or Nasi Ulam….

    Ayam percik is a compulsory dish that my grandma cook during ramadhan. We will do big family gathering and break fast together. Miss my grandparents at kampung❤️

    Should cut the chicken to 4 parts or more & put on wire rack to ensure the chicken will not be runny so that you can get crispy texture on the outside. Flip it over few times by putting the sauce every time you flip it.

    Bravo Ichang & Jimmy for cooking this dish. It is my all time favourite. Best way of enjoying this is by the beach with sea breeze.
    You are so cute, while preparing the sauce you will like always think it is gonna be too much. But while you eat it you will scope more and more of this heavenly good sauce yeah!
    This dish you can use fish, in fact it tasted really good with fish. Chub mackerels are commonly used but King mackerels are good too.

    In your next visit to Malaysia, make sure that you spent some times in Kelatan. Take your lunch at Restoran Ayam Percik Yati... You will be happy and enjoy the food there, ayam percik, daging percik, ikan percik, nasi kerabu and there are alot of kuih at the place...

    There 2 type of sauce for ayam percik, one like what you did & the other is white colour sauce. Both are equally good. Food & dessert from East Coast (Kelantan) are mostly very, very sweet. For ayam percik, best of you can grill like satay. Cook over open fire is the best taste. If you want something from East Coast, you can try out Nasi Kerabu. Remember your video on raw veggie & herb?? You just need to have cucumber, turmeric leaves, lemongrass, ginger, laksa leaves, mint leaf, red big onion, white & purple cabbage will be good enough for you. The sauce from your ayam percik can be use to eat with the nasi ulam too

      Nope...no cabbages in authentic nasi kerabu. Just thinly sliced long beans, ginger torch flowers, Vietnamese coriander leaves, beans sprouts and winged beans. Sometimes can use tumeric flowers as well. Not tumeric leaves though. And definitely not ginger and lemongrass in raw herbs in nasi kerabu.

    Ayam = chicken
    Percik = splash, basting
    Meaning, you grill the chicken while basting/splash it with sauce. That is why we called it ayam percik. For easier step, you can half boil/cook the chicken with coconut milk then finish the cooking process on the grill or oven. But make sure, you covered the chicken with sauce.
    If it's not coated with sauce, it will be roasted chicken with percik sauce, not the original aym percik.

    I am from kelantan but live in usa I miss this chicken very much I tried to make one but it dog fed not taste the same because traditionally it's grilled open for for the smoky taste ... also try make nasi dagang next time!

    You should have quartered the chicken first then baste it repeatedly with the sauce that you made earlier .. but usually we will half cook the chicken in the sauce then we grill the half cooked chicken then baste the chicken with the thicken sauce ..

    I was having pregnancy craving on ayam percik and i specifically want a white sauce ayam percik. But the red sauce ayam percik is easily find compare to the white one. Nevertheless i got the white sauce ayam percik at one of the kelantanese restaurant at shah alam and im happyyyy.
    Kelantan dish was more to sweet taste and the kelantan kueh also soo good. Nasi air from kelantan was also good! Now im craving nasi lemak ikan from terengganu. These state dishes u need to eat at its specific state because the taste wont be the same. Maybe next time u visit malaysia u can visit other states

    next you must try kelantan famous food it is nasi kerabu. Nasi kerabu is a Malaysian cuisine rice dish, a type of nasi ulam, in which blue-colored rice is eaten with dried fish or fried chicken, crackers, pickles and other salads. The blue color of the rice comes from the petals of Clitoria ternatea flowers , which are used as a natural food coloring in cooking it. The rice can also be cooked with plain white rice or rice cooked using turmeric. It is often eaten with solok lada and is also eaten with fried keropok.

    Then, the dish will be sweeter than average.
    even curry in kelantan is sweet.
    milky tea served in kelantan use sweetened milk half of the cup per serving. So can you imagine other dishes 😂😂😂
    they absolutely sweet .

    Almost all of Malaysia's dishes are heavy and fattening but there is one dish that i can consider it as a 'little bit' healthy dish which is *NASI KERABU* please cook *NASI KERABU* next and try it.

      I dont think they can find Clitoria ternatea (Asian pigeonwings) flower there to make the rice blue. Although, I can find it everywhere in my neighbourhood every 20 metres lol 😅🤣. It grows menjalar on my neighbour's fences

    I freeze pandan, lemongrass and curry leaves esp since it’s difficult to get close to you, best to just freeze it. Wish u guys can go back soon! Please start writing an ultimate food itinerary and ask for input from subscribers 😊

    That sauce can be eaten with grilled fish too.. Have you tried 'Nasi Daging' before? It is beef rice.. The beef is cooked in together with rice, mixed with some herbs and spices.. It is eaten with 'air asam' which is the spicy tamarind sauce..

    im from Kelantan and what I can say is that generally Kelantan dishes are very sweet. if you see nasi lemak in kelantan the sambal is so red in colour and it will scare you but after you eat it the taste is sweet and not spicy at all..

    When Malaysian boarders are open you should visit Kota Bharu Kelantan for a food. They have a good food, good traditional desserts.

    Kelantanese always grill the chicken over charcoals and only baste it only after the chicken is half cooked. Basting is repeated a few times so the meat will absorb the flavors while grilling.

    Well done both of you completing your mission in cooking ayam percik Kelantan.
    Yours looked a bit different & juicier than what you have seen because originally ayam percik is cooked on charcoal & tastes smoky. Your oven did only what it's limited.
    Nevertheless, yang penting: the outcome taste must be Sedap! 😋

    Hi... I just want to share how to cook chicken percik that is usually cooked in Kelantan or that I make myself.Usually the chicken will be cut into 2 parts.
    And the most delicious way to roast chicken is to roast using charcoal,You will taste the smokiness.Besides,when roasting chicken, you just need to spread the sauce on the chicken using brush or lemongrass,so that the chicken will not dry.I think,your chicken a bit dry 😅
    But every step you cook are correct, shout out to i chang & jimiy 👍🏻✨

    Limau Nipis is Lime. ☺️ Omg I wanna try making my own Ayam Percik because I usually buy it instead of making on my own. 🤤 So hungry. By the way, to make chicken more crispy when roasting, don't add extra liquid on it, marinade should be with less water. To cook evenly, you can use chicken pieces instead of whole chicken. Some people grill their chicken instead of roasting it. You can try grill your chicken but don't forget to add oil in your marinade to avoid sticking on grill, just like how you make satay

    Yay from kelantanese.. but traditionally our sauce is pure white cause most kelantanese don’t eat spicy things … when I found white sauce percik.. that is the traditional kelantanese one…
    If you grill it on open fire / charcoal, it will takes more than 5 hours… but now the easiest way if you don’t want to marinate.. just use the sauce.. while grilling it … every 10 min just put a layer of sauce on the chicken.. using serai brush.. then grill it back .. its delicious .. no need 2 hours to marinate

    You 2 can try AYAM GOLEK .Because it use all the chicken. It not same with AYAM PERCIK,because AYAM PERCIK you must cut it.But it's okay for try something new.Sorry my English not so good to explain it.😓

    Next time when u want to brush the sauce onto the chicken, try smack 2 lemongrass, and tie it together. Dip in sauce and brush with it. It will be easier and more aromatic. try it :)
