  • Clever Dripper Coffee Brewing Tutorial 2022
    We do a quick Clever Dripper Tutorial here at the Virtual Coffee Lab because it is my favorite coffee brewing method. Steeping coffee like a french press, this brew method is fast and super easy with little room to mess things up. The Clever Dripper is inexpensive and produces a great cup of coffee! The video covers all of the basic steps you need to create barista level coffee brewing at home.
    The Clever Dripper immerses the coffee, like a french press for a total of about 4 minutes. It has a plunger on the bottom of the cone shape funnel that holds the coffee from running out through the bottom, keeping it safe inside during the steeping process. Then, when ready, the Clever Dripper is set on top of a mug or decanter, pushing the plunger upward, releasing the coffee. It is a simple and effective way to make great single serve coffee just like a Barista!

    Mike, I just received my Clever Dripper yesterday and put it to use this morning. It was everything you said it was. I brewed 2 times and the second was much better because I didn't allow the coffee enough time to brew. The second cup was excellent and I am looking forward to more brewing with this. Thanks for your patience with my many questions. I am sure I will have more.

    Another great video! I’m kinda shocked that this is the first time I’ve ever seen or heard of the clever dropper! Like a French press version of a V60. Lol, thanks a lot, now I will be adding yet another way to make coffee!!

      @@VirtualCoffeeLab I have an Aillio Bullet which I've been using for about a year. Prior to that I used a Gene Cafe. I like them both but the Aillio is more of a true, drum roaster with all the controls, etc. I'll bet you'll agree what a great hobby this is!

      In my next video I comment that home roasting is a great hobby. Sweet Maria’s has been promoting the bullet I think right? Looks like a great roaster with full control. Nice!

      @@VirtualCoffeeLab Yes and I believe Sweet Maria's is the sole US dealer for the Bullet. That's where I bought mine. They sell out within minutes of receiving a shipment so I was just lucky to get one. I also looked hard at the Mill City roasters but I don't have access to natural gas and didn't like the idea of propane so I settled on the electric Bullet.

    I got a clever dripper for Christmas and I wasn't expecting it to be a marked improvement on my aeropress but the difference is amazing. Have you tried James Hoffman's tweak of adding the water first to reduce drawdown time?

      @UncleRiotous, glad you are enjoying the clever dropper! yes, I’ve tried several different methods including adding the water first. I’m not sure it makes that big a difference but if it is working well for you, all the better. Whatever method used, We need to include the drawdown time into the total brew time. So if you want a 4 minute total brew and it takes 30 seconds to empty, consider starting your draw at 3:30. I like the swirl technique so the water passes through all the grounds.

      @@VirtualCoffeeLab Great video. It was also my first daily driver. Full circle. I'm big fan of the water first method-if it helps. I use 30 grams of finer grounds 500grams of water and a 3:15-3:30 total time with a 40 second pour-down(only possible with water first). Sounds like you have a good method dialed in with a pretty fast pour-down time already. It may be an example of a method that will not necessarily benefit from water first.

    Great video. For pour overs I've used Melitta, Hairo v60, and Clever Dripper (my fav). I do have a question about brewing time. I usually let it brew a full 4 minutes and then extract for 45 seconds. You only brew for 3 minutes and then extract. Is there a marked difference from brewing one minute less? Just curious because I am always in search of a better and better cup of joe!

      Thanks Tim. So my total brew time on the Clever Dripper has changed over time. There are some "experts" who talk about maximum "steep" time for coffee and it usually falls into the 4 minute max. I think I watched that on a James Hoffman video on the french press. Anyway, Clever Drippers are steepers. I found that my coffee was less bitter with a total brew time of under 4 minutes. I think I saw another video where they were discussing extraction and said that there was no benefit for anything over 4 minutes so drop and be done before then. That is how I ended up where I am. It all boils down to personal experience. If you have great coffee brewed in your Clever with a 4 minute steep, but a 3:30 steep gives you a flat or weak cup, then stay with the 4 minute steep.

    Try a $2 "cloth" (this round cotton thing with a wooden handle), you'll never come back to paper filters. This velvety feeling coming from the coffee oils that can make it through the cloth, but not through paper, can't be beat.

      Interesting, you use the reusable muslin cloth. Yea, that velvety feeling is probably the silt from the brew. You can experience that with the french press too.... Thanks for sharing.

    Thanks for this excellent video. I plan to purchase a clever dripper in the near future. My question has to to with the amount of water used. I get the 350 grams for the brew, but how much water do you use for the warm up and wetting the filter? I would like to heat up the total amount of water in my kettle. I guess my question is 350 grams plus? Thanks

      Hi Tom, I use enough water to wet the filter and drain. If I had to guess, it would be about 75 grams of water. In reality, I should probably use more but I'm happy with the result, as I don't notice any paper flavor in my cup.

    Any thoughts, please, on a reusable filter? If so, which one? I enjoy the Clever but I'm going through a lot of paper filters.Would a change affect taste?

      Hmmm, I tried to find a nice reusable filter and wasn’t able to. I’ve been using bleached #4 filters in packs of 100 for like 2.70 . I pre rinse the filter before use to prevent paper taste. If you do find a reusable filter that fits well, please share

    Good morning Mike, I hope all is well with you. My question re: the Clever Dripper has to do with the decanter. If I get the large one, do I really need a decanter?

      Hi Tom, I used the decanter in this video so people could see the clever dripper release and dispense. It effect didn’t turn out exactly like I wanted because it steamed up. I don’t normally use a decanter unless I am sharing. Simply dispense into your mug 🍵

      Hi Tom. Wow, that was quite a while ago. I think I misspoke. It was an El Salvador pacamara honey from royal coffee I think? I usually buy their Crown Jewels and they sell out quickly.

    Try pouring the water first then add coffee and stir. Drawdown time will be faster so adjust grindsize

    So do you find that letting it steep for a time gets a better taste before letting coffee drain is better than letting it drain as you are pouring like they do in coffee shops? I will have to try that. I usually pour slowly over a period of three minutes as the coffee drains similar to how a technivorm coffee maker works.

      The clever dripper is an "emersion" type brewer, similar to the French press. As you said, the coffee steeps. I love this method for its simplicity. Anyone can do it without much technique. Over the past year I have come to really enjoy the Kalita brewer which is a pourer method. That is now my daily driver and I really enjoy the results. The coffee tends to be a little cleaner and brighter. Over the past few months I have been experimenting with the AeroPress and boy is that an interesting brewer. The Aeropress will brew in about 2 1/2 minutes and most of the results are really good. At some point I might talk about it on my channel but there are already many videos about the AeroPress.
      By the way, the brew method I am using with the Kalita is the "George Howell" method.
      My son has a Technivorm brewer that is nice to use when we have friends over.

      @@VirtualCoffeeLab On my Technivorm coffee maker I threw away the plastic brew basket and replaced it with a glass Hario coffee dripper. It fits perfectly and I don't have zeno estrogens sluffing off in my coffee from the plastic. So to try making coffee the way you suggest in this video I ordered a glass Hario #3 immersion dripper that has a shutoff so you can let the coffee steep. I have the Clever but don't like the plastic. The Hario is 36.70 dollars on Amazon so it is more expensive but I really like it.

    Great video! However, while Brita filters out Chlorine, it leaves the fluoride in. Fluoride is a difficult one to filter out of city water and usually requires something more spendy, like reverse osmosis.

      That’s interesting, I didn’t know that. We have zero water at work . What type of taste does fluoride have? Mom beck, are you roasting at home? If yes, what are you roasting with?

      Berkey water purifiers have fluoride filters you can add to their system (in addition to the regular filters that remove chlorine, pesticides, etc). Berkey is a purifier, not just a filter (a few more decimals in the filtration level).

      They also don't require all the extra water that reverse osmosis filtration does. (No financial interest here, just interested in good, clean water.) Berkeys do not remove minerals, which can be great news for coffee taste.

    Hello!! I have been using the clever for a few months, but I have seen lately my coffee stick in the walls of the filter, can you give me an advice.
    I have been using 30grs of coffee for 500gr of water.
    3 minutes steep and dripping...

      Thanks for your comment Bj. Yes, pour in the water first, then pour the grounds on top and use a spoon to submerge the grounds. You should see a creme appear. Close the lid, wait 3:15 and then gently swirl the clever dripper just enough to break the crust on the top of the waterline. Don't swirl too much so it spills over the filter, just enough to break the crust, then set on top of your mug. It will drain faster and you should see very little grounds stick! I love the clever dripper!!!!

      That is interesting. Did you change the grind settings too or just the coffee? What were you brewing with when it was sticking to the filter and what are you brewing now where it doesn't stick?

      Hi Nathan, thanks for watching my video. The clever dripper is made of BPA Food Safe plastic. I believe other brewing devices including the AeroPress are made of the same material.

      I have only had an aero press one time several years ago so I can’t answer that. I will have to get my son’s aero press and compare. Is that your favorite brew method? Have you compared others to the aeropress? I know there is a whole following of aeropress lovers out there.

    What is the grind size please?

      When brewing with the Clever Dripper, I grind my coffee to a medium fine setting. Maybe as small as beach sand. I want to avoid the "mud" texture from grinding too fine but I don't want the grind to be big enough to allow the water to just rush through. The finer you grind, the more extraction you get. Also, depending on your roast level, be careful with the water temperature. If you are confident your roast was good but you are tasting bitterness, you might want to back off on your water temperature a bit OR maybe you ground too fine. After several servings with the Clever Dripper you should settle in on what works best for you.

      Great question. Since this video, I have been adding water first and then my grounds. It is personal preference. I find that the coffee draws quicker when the coffee is put in last.

    Why not deliver the coffee straight to the mug? You would get hotter brew with 33% less clean up.

      Hello @Florida Vermont, I think I did that so people could see it leave the clever dripper. The effect wasn't what I had anticipated because it steamed up. When I brew for myself I do go right into the cup, that is part of the beauty of the clever dripper. I agree, less cleanup is a good thing. Thanks for your comments and for watching my video!

    I am really surprised by your choice. I find that any type of paper filter takes away from the taste profile of the coffee. There is a reason no filters are used for cupping coffee. You take so much care to preserve all the indigenous flavors of the coffee with your roasting stile and then you filter them out through a bleached paper filter. I much prefer French press or Mokapot. Just a different opinion. BTW I am also roasting on a Mill City roaster.

      Hello MCR Brother. Thank you Heiko for your comment and for watching my videos. I'm sure you are right about the bleached filter. I use both bleached and unbleached. Generally, I pre-wet my filter so that helps reduce the paper taste. I love the french press but have never used a Mokapot. Using the same coffee, how does the Mokapot influence the flavor of the coffee compared to the french press?

      @@VirtualCoffeeLab Mokapot is also called stove-top-espresso. That gives you an idea of the taste profile to expect. The brewing time is much shorter than FP so you can expect less caffeine and bitters extraction. Grind is very fine, almost espresso so you will need a grinder that can handle that. The results are nothing short of amazing. The cup it produces is very intense. It is like taking a magnifying glass at the taste notes of the coffee. I am mostly using my Espresso blend (Sumatra base, Colombia mid and some Kenya for the high notes) and I am in love with the results. The cup is strong and smooth with not even a hint of bitterness, big body and the sweetness hits you and lingers long after the cup is finished. Even my wife who typically likes her coffee on the lighter side noticed that. Mokapot are very inexpensive and I think you are really missing out. You should try it.

      Thanks for the reply Heiko, I have seen Mokapot demos online and have wanted to try one for a while. I will put that on my Christmas gift wish list! So, would you brew an light and bright coffee with the Mokapot? Seems like you are using mostly less fruity notes with small bright notes from the kenya. What ratios are you using for water and coffee and how long are you steeping?

      @@VirtualCoffeeLab Good question, I have not tried any light and bright coffee with it. As for water to coffee ratio you will need 28g of coffee on a 300ml pot. I never measured the brewing time because it is determined by the brewing method. You are done when all the water from the lower chamber moved into the upper chamber. I think it is less than a minute. I will pay more attention next time.

      Just did a test. My 300ml pot took abound 40 seconds to brew.

    BTW the Clever Dripper is an immersion brewer - not a pour-over method as you initially indicated.
    It may look like a pour-over brewer but is immersion much like a french press or Aeropress.
    Why do you take the lid off when decanting - the waves on the top leading edge of the clever is designed to stop any airlock that may occur.

      Hi Terry, You are correct, the Clever Dripper is an immersion brew, just like the French Press. My mistake, sorry about that. I'm new at the video thing and there is a lot going on during the filming, trying to present everything the best I can. Thanks for the correction.
