    I totally love your vlogs, because you cook like I do. If you don't have exactly what is required in the recipe, you go slightly outside of the box. I hardly have any food waste as well. I take stock in the frig. and what will go bad first is what gets cooked regardless of our wants. If it's not what we like in taste, I will reinvent it the next day into something else. Thanks again I enjoyed it.

      I’m not a cook. I cooked exactly following a recipe to the point of buying what I didn’t have. Watching Maria has given me the confidence to stray a bit. Garlic or onion powder will do if I don’t have them fresh. It’s so freeing.

    I have been making my meatloaf in muffin pans for over 30 years :) My kids were never really picky but there were a few things they didn't like & since I made them in the muffin pan it was easy to omit things like onions for them & still have them myself :) I also put cheese in the center. Fast & very easy :)

    Another great video, thanks Maria. When cooking ground beef ( we call it mince in Australia) I often add a can of brown lentils to stretch the meat further plus add fibre and extra vitamins. When I am super organised I cook and freeze recipe sized portions of the lentils as I think they taste better than canned and definitely cheaper.
    I a, going to make the lasagna soup!

      I do that to, my husband looks at it and I get the "look" now after the lentils are cooked I mash them up and add them in. He's such a man child.

    My brother worked in a restaurant years ago. He told me they cooked their bacon on a baking sheet in the oven. I've done it that way every since.

      The only reason why I Don't cook my bacon that way is the cost of using the oven and the time it takes to warm it. I use a frying pan on med low and cook it slow. It's crispy and no popping grease

      I was going to comment, about cookie sheet baking bacon, and I read your comment. I had not heard of this before, until I was in my forties. My oldest daughter told me she cooked hers this way. I have never pan-fried bacon since. It's awesome in the oven, and less work too. :)

    Raw ginger freezes beautifully. Just keep a small "hand" of it in the freezer, takes up minimal space and just break off a thumb whenever you need it. Buy organic so you don't have to worry about peeling it before grating.🥰

    The ground ginger trick I learned is to chopped fresh ginger once and store in a small glass jar and cover with olive oil then store in refrigerator. Just like fresh garlic it really elevates the flavor.

    Thank you for all of your good ideas, much appreciated. I have inexpensive bags of fried shallots and fried garlic I got from an Asian market that I use as substitutes for mincing and dicing on those days when I just can’t. Hope your ankle is on the mend.

    I purchased the hamburger masher tool( not sure what it’s really called) at Dollar Tree. It is a bit smaller than the ones at Amazon or Walmart but it works just fine and is of good quality.I do have 2 sizes and use both of them all the time. I have a lot of kitchen utensils from the 1940’s and I’ve used the potato masher to break up hamburger in a skillet that isn’t non stick. Hope this helps anyone looking for the hamburger mashers😊

    Ok here i am again. In our house when it was 10 of us we had bacon cheeseburger (insert food here). Most any time a recipe called for ground meat we could do a ground meat, bacon chunks/bacon grease/ bacon crumbles, bbq sauce and a smidge of mustard. If we wanted to up our game we would do grilled onions and mushrooms(canned or fresh) to make it a mushroom bbq bacon cheeseburger whatever. Add chopped pickles or pickle juice. Meat loaf done this way is amazing. Mac n cheese done like this is a real cheap crowd pleaser. Done as a soup is great to especially in a bread bowl if you get them on the bakery clearance rack at the back of walmart.
    Also for meat loaf use the bread from that clearance rack for the stuffing part. I have even stuffed the day old Italian herb loaf with a meat loaf...oohhh now im hungry again.

    I made the poor man's Stroganoff tonight from this video/recipe. Wonderful! I served it over a baked potato. Definitely the best version of ground beef Stroganoff I've ever come across. I will never even consider Hamburger Helper again.

    Love these recipes! For an easy shortcut, cook the unpeeled sweet potatoes in an Instant pot. When cooked, the skins slide right off.

    Your channel is amazing.
    Vegetarians could make all these recipes by adapting spices to Beyond Burger or something similar. I like to use Marmite when added to beef makes it taste like it was seared even if it wasn't, and also spice blends that are a little sausage like with fennel in them usually (maybe 1/2 to 2/3 as much as with sausage). Spouse agrees it makes you "believe" more that it's beef. Hopefully those beef subs will come down in price.
    Next year veggie prices will likely go up a lot with our ongoing droughts in many areas, so channels like yours are super important.

    Those meatballs look ace! I love how all the fat is saved in the little individual pans too and i would refrigerate those to make dripping circles with yummy barbeque flavor! I bet those would be delish on some homemade bread!

    I love your vids and I've tried lots of your recipes. I made the meatloaf tonight and it was the first flop. The complaints I received were that it was bland and dry. I'm going to make it again, but I think I'll add a pkg of onion soup mix with 1/2 of the pkg suggested water. Thank you for all you do!

    A friend uses the cooking water from boiling the potatoes as a substitute for milk or butter. Adds potato flavor.

    I have a tip for you about fresh ginger. Buy a decent size hand of fresh ginger make sure it has some “fingers” you can brake off. Or grab some of multiple sizes. You can wrap them very good and put the bunch of pieces in a bigger bag. Even better vacuum seal it if you can. It will last months. It may shrivel a bet but you just grate it usually anyway. I’ve done it many times. You are a joy to watch. Very enjoyable and calming in a good way. Your cooking isn’t chaotic. 👍💚🦩🫰
    I have question. I’m an empty nester. Is it possible for you to do a video something like this. Since starting to live alone I find it hard to cook meals. I don’t eat pork, veal, lamb. Other than that everything else is a yes. I love vegetables. Do you think it’s something you could or would do? And if yes, I’d it possible to let me know?     The onion and vegetable scraps can be saved in a bowl to use for making broth. I save the root end of shallots, leeks, and onions to plant in the garden for fresh onion greens.

    I make what I call "diner" meatloaf. I saute celery, green pepper and onion, then add to my ground beef. I add 1 egg, breadcrumbs and ketchup (eyeballed). My family loves it.

    Okay so about the so-called-single-use garlic press? Those self-proclaimed know-it-alls can MTOB thank you very much. If they know better they can come to your house and PERSONALLY hand chop all the garlic you need for your recipes. You have a husband, 3 boys, Max (I think your 4th son is your furbaby Max) and one of the best channels on TH-cam. I'll just sit here waiting for them to do better. Please send the rescue ferrets and wine because I will be waiting FOREVER and be covered in 🕸🕸🕸.

      Since the pandemic, I've purchased ground turkey about 3 out of 4 times and use it anyway I would ground beef recipes. I add a bit of beef bouillon or Worcestershire sauce and no one has made any notice for the difference.

      @@yvonnepalmquist8676 I tried to make hamburger patties out of it for the first time. I added Worcestershire source and garlic powder as well. But it was very bland. Also, the patties completely fell apart when I scooped them up. The burgers turned out to be loose meet burgers instead. I would like to know how to make the meat bind into patties. If anyone can please help.

      @@JWimpy honestly, I've only done ground meat recipes. I rarely make hamburgers for myself, so you probably have a valid question there that I was not aware of. Have you tried to make it more meatloaf like with bread, beans or an egg binder?

    I do buy the large bottle of minced garlic at Sam's Club. Saves me a ton of time as we make a lot of recipes that ask for minced garlic. Recipes look delicious!!

    I think my dad had the same recipe -- only he called it "Hobo" stew. He would add different veggies, depending on what was in the fridge or cupboard. It didn't matter, we slurped it anyway!

    I always have ginger on hand because I wrap it in plastic and freeze it. When I need it I just grate it while frozen and don’t even peel it.

    With instant mashed potatoes... if you have dry milk powder all you have to do is mix you milk powder with your potato (flakes, crumbles, buds or whatever your box/bag calls them) drop in the room temp butter and just use hot water from you electric tea kettle. No need to dirty a pan on the stove top or run the microwave...especially if you have several items going or limited hob space (ie rv stove tops...or portable hot plates ect.) . I do this with instant rice if i just need a serving or two.

    Hi Maria, greetings from the UK. Hopefully this can help you & fellow North AMERICA'S - Worcestershire is pronounced "Wooster-sheer". Most counties in the UK ending in Shire are pronounced shear & not like in Lord of the rings. Secondly, shepherds pie is made with LAMB mince (ground) and COTTAGE pie is made with beef mince (ground). Easy way to remember, shepherds look after sheep and in the olden days every cottage had a milk cow.

      Yah I think the Shepard’s pie thing tends to be different here vs. there. I think in the US we’ve just adopted it as any meat, veg, and gravy with mashed on top 😂 I always forget to switch up the language 😅 thank you for the pronunciation 😀 hopefully I can get it right!

    That recipe from your childhood looks a lot like hamburger stew except aside from the tomatoes. We put in green beans and garlic.

    Buy a chunk of fresh ginger, place in zip top bag and a store in the freezer. Break off a section and grate frozen..use as desired in recipes.

    For your meatloaf, next time line your pan with plastic wrap, fill with your meatloaf. Then turn it onto a rack lined pan/cookie sheet type. Cover the whole loaf with Chili Sauce, cook and wait for the compliments.

    I use a cookie scoop and scoop the extra tomato paste onto a sheet pan and freeze. Store in a freezer bag and just add to your recipes as needed. Thats 1 tablespoon per scoop.

    Love the cheeseburger skillet casserole. We use a can of tomato soup in place of the ketchup. All the other ingredients are the same. We call it Chuckwagon Casserole.

    Have you looked at veggie hand choppers in Amazon….? Great way to prep ahead…I chop onions and peppers mushrooms etc the day before making up meals. Garlic I use my mini electric processor and then I put the mince garlic in vinegar or oil…ready to dip out with a fork….my hand tire easily so this helps.
    I cook potatoes in my instant pot to have all week…..if there’s enough room I put my steamer basket on top of potatoes and get veggies steamed at the same time.
    Started flash freezing meals in a baking dish lined with parchment paper when frozen I pull up and wrap the frozen meal well then into freezer bag or vac seal…..I broke too many glass containers by having them slide out of my upright freezer….this way no glass….defrost till parchment pulls off and put back in the dish to bake…
    I know people use those metal alunimum pans but I don’t trust they can’t give off chemicals. Besides I went to buy some large ones to use in my greenhouse as holders for my plants and they went from. $1 each to $7 ….😱

    I did the generic stove top stuffing mix in my meatloaf for awhile. Then realized it's costing me more than just putting in oatmeal and my own seasonings. Now, I put in oatmeal and have the stuffing as a side dish to go with it. If you have leftovers, just mix the stuffing and the cooked meat and add veggies to the mix and you have small casseroles add that little bit of cheese or the bottom of the chips bag to the top.

    Never tried meatloaf- kinda curious to be honest! Not sure we can get stovetop stuffing in my country, but surely I can come up with SOMETHING to replace that lol

    Wana try something great with potatoes flakes....try breading chicken tenders with them. It's amazing. It's like potato chip meats chicken tender. So delicious. I just bread them not ally...flour, egg then the potato flakes. I add some salt and pepper maybe paprika to the flakes...and they have to be the flakes not the packets of potato buds the box like u had of potatoes flakes...then shallow fry them in a little oil. Ahhhhh-mazing and kids love them
