    He opened a few other places that use his recipe. They charge more because he has a bunch of employees to pay. But he makes the same amount of money per meal. I think he even had a sign that apologizes for the higher price cuz he has payroll 😂 The man is true to his craft and profession.

    He had the feeling like the Michelin star was earned through his customers so he kept the prices low. Just wow. This guy loves what he does.

      Don't be so naïve. It's an effective business strategy. He's a smart man -- sell good food for the cheapest price that allows for profit, and customers will be flocking like birds. Most restaurant owners aren't quite as bright, to say the least, which is why the vast majority of restaurants that open fail, selling okay to bad food for unreasonable prices.
      Case in point: popcorn stands. It is unbelievably cheap to produce tasty popcorn in large amounts, yet most popcorn stands sell you a relatively small portion of popcorn at $3+. That's a gargantuan profit margin (for a product that literally costs pennies to produce), so much that it minimizes demand to the point that supply ends up becoming excessive. Imagine that at such price point, you sell to 30 customers that day.
      Had the price been $1 (which is actually still a massive profit margin, but I reiterate, most restaurant owners aren't all that intelligent), the popcorn stand would have sold popcorn to over 300 customers.
      This is an oversimplified example, but the concept holds true. It's simple supply and demand. Most business/restaurant owners are so obnoxiously greedy that they are unable to meet the sweet spot exhibited in the graph of supply and demand (also known as the midpoint).

      well, of course he can keep prices low... for his original stall that is. If you noticed in the video, his business as a company has blown up. I'm sure he makes enough from all the franchises that keep the prices dirt cheap at the stall he works works as is no problem and is more or less a hobby at this point.

      @@Elden08 Not surprised at all. The taste deteriorate alot. I went to several branches of hawker chan and the standard is far from the original. There's one soya sauce chicken rice in 79 circuit which tasted far better and very close to the original taste.
      The only consolation is probably he will stay rich since his collab has spread to several countries.

      @@deeharper1364 I think the reason for that is that the workers of the other separate chains probably don’t have much care, effort, or enjoy making the chicken as much as the original owner does. I have no doubt that the original location still taste delicious m, however. I visited it last month 💀

    wow. the honor this man has is absolutely incredible. spent a long time perfecting his recipe and doesn’t even think to claim his success on his work. rather, he remains humble and gives his customers the credit for enjoying his food so much, not even raising the price.

      Jason Peng different chains are not operated by the same guy, the manager (middle man) got the recipe. That's about it really. The middle man is the sellout not the guy here.

What I do that is like him is to help out where I can, when I can. I don't expect any reward for my actions because I do it out of wanting to help someone out. If they offer anything I politely refuse it and just ask that they pay it foward to someone else somehow. I'm not a Saint and I won't ever be. I just try to put more good out there than the bad that I have done in the past.

    it’s interesting how the michelin employee just randomly ate at his stall one day. i never thought michelin cared about hawker stalls, since only mega expensive, fine dining european places were given the stars traditionally.

      aroundsundown the entire point of the Michelin guide, from which Michelin stars come from, was for backpacker/road trip style tourism. I wouldn’t be surprised if some of the reviewers kept that spirit alive by going to unconventional/reasonably priced places, both to visit and to dine. Sometimes, they find a diamond in the rough like this guy.

      There are actually a decent number of cheap/reasonably priced places that have earned a Michelin star. It's extremely rare that anything less than a fine dining restaurant will earn 2 or 3 stars though.

    As a Singaporean myself, I thank this humble uncle for seeking his food at less than $2.
    Nowadays in Singapore food courts chicken rice sell at $4/$5, but will not be nearly as good as his standard.
    That's real humility and kindness from him right there.

      Nacho TV its $1.50 because rent at a hawker center is absurdly low because usually the lighting is only turned on fully at night and there are only fans. in his other shops around singapore with air conditioning i think the food is slightly more expensive at around USD$2/3 due to the air conditioning costs and rent

    I (almost) went there in December 2017. Saw the HUGE line - maybe 60 minutes or more. Decided to, instead, go eat at another stand that looked more or less identical. The guy at the other stand complained that everyone has been selling the same food for 40 years, but this one place randomly got the michelin star. The food was really good.

      @@lovelydovley1704 This guy has only one product. His Michelin star is kind of a gimmick if you look at the guidelines that Michelin follows. It's an exceptional product but otherwise doesn't come close to the criteria for a Michelin star.
      In a European restaurant the portion sizes don't get smaller. It's not like a restaurant suddenly gets a Michelin star. They work 14-16 hour days to prep everything to perfection. The menus often have 6, 9 or even more courses so you get a lot of small dishes (each of them takes a lot of prepwork) which will fill you up nicely.
      It's usually people who go and have just a main course who complain about portion size. Going to a Michelin restaurant is an experience. If you wanna go there and not spend too much the it's better to go somewhere else.
      The prices are high because often the ingredients are expensive and the staff costs (these restaurants need a lot more cooks than a regular one + they're better cooks. Also there's more waiting staff per guest) are higher. That plus the costs of developping new dishes everyday and spending time and money to find the right wine (which means going to a vineyard in Chile or whatever) that pairs with a dish make it that the prices are higher.
      The food however will be on a level that a normal restaurant can't approach. It's a very stressful and tough business and any mistake can cost you your Michelin star(s).
      The oversimplification that was painted here doesn't do justice to the truth.
      You might think it's overpriced, but there's so much more work to it than a normal restaurant that it's not just smaller portions for a higher price.

      It's not true! Here in Paris I know some Michelin star's restaurants (2 stars!) who serve amazing 5 courses menu for 40€ (lunch) and 80€ (dinner)
      EDIT: for example La Table d'Eugene (2 stars). Or its little sister La Rallonge restaurant owned by the same chief (with no stars though but recommended by Michelin still) who propose a 5 courses menu at lunch for 20€

    I can't count how many times on my travels through out SE Asia where I've seen these little odd restaurants much like this one with mind-blowing amazing food. I miss it so damn much. Not only was the food brilliant, but so were the people!

      It's hawker culture. Pretty much street vendors but with designated areas of operation and higher standards of cleanliness and hygiene etc. Really good for for really cheap since most of them are old generation hawkers

    So proud of the Michelin inspectors, I thought the place had to be luxurious and the food expensive for them to even consider it. But if they dared to try this and decided he deserved a Michelin star it means they actually give the price because of the quality of the product and not all the fancy bullshit. Will definitely try this chicken one day.

    I was honored to try the soya sauce chicken which he was awarded for from one of his chain restaurants. It might not be from the center hawker chan but all i can is damn, that was the most flavorful, tender and beautiful chicken i ever tasted and only for a affordable price??? everyone can experience now what a Michelin star food feels like and its thanks to this guy.

    A plate with small cut beef with cilantro and sauce ontop on the beef = $250
    Roasted duck/chicken/pork with more than 8 pieces ontop of steam white rice = $1.50 or $5.
    Big difference.

    Been there. Took us two days to find it. Made a mission to get it. Got the chicken and char siu. Long lineup. Sells out before the hawker centre closes and was cheap yet delicious. Me and my wife are gonna go back when we can. Singapore was 👍
