Tips for mici: make them a little larger before putting them on the grill; because of the fat percentage in the meat mix they can shrink quite a lot Tips for the sarmale: cut the spine on the leaf in a V shape (you should not have any hard veins on them). For easier rolling, think of it as sort of an envelope: put the meat in the leaf, fold the sides over the meat and then the side that's towards you on top, and roll until the leaf ends (preferably not to cut it). Be mindful of holes in the leaf because the meat can seep out when you boil it. Other tips: mash potatoes with sarmale is a no-no Sarmale and mici should be served separately (they are usually consumed as separate dishes)
For the mici to be really bouncy , you have to boil pork / beef bones , collect the broiled juice and mix with the mici ...adding the bicarbonate . Let it overnight in cold / refrigerator , to absorb the bones broil and grill next day

Happy Birthday, Ivana! Food looks good. I like my sarmale with some thyme added to the mix for seasoning-a pinch or two gives them that distinct home-made sarmale flavour to me. Your papanasi dough came out too runny because you're using the wrong type of cheese. Whoever translated the ingredients for you got it wrong. Brânză de vaci in US at least would actually be farmer's cheese, not cottage cheese. Completely different and my guess is it's the same in Canada. Pretty easy to make from milk and 2 tbsp of distilled white vinegar or lemon juice if you cannot find it in stores. Also good as filling for crepes when sweetened a little bit. You're making me crave Romanian food!

That's nice and you guys are great! If you want the authentic taste and texture of Mici, you'll definitely need to use some beef bone stock (as concentrated as possible). The gellatin in the broth is what gives the mici the bounciness! Also, you need to keep in the fridge for at least 24h (preferrably 48) and every 3-4h take it out and work the meat with your hands, adding more bone broth as needed (bonus points for infusing the broth with minced garlic beforehand). By doing this you emulsify the fat in the meat with the broth, allowing for more liquid to be incorporated into the mixture.

sarmales are traditionally baked in the oven in a clay pot and "jumari" is also added for a better taste. And you can also try sarmales in vine leaves (grape leaves) with sour cream

The papanasi is actually made more like a donut than it seems at first glance. You make a round cut in the middle of the dough, and then fry the two pieces separately, then place the ball on top of the hollow space you initially took it from. That's how you make the ball sit in place, and it might help with the overall shape of the bigger piece too. Also, happy birthday!! 🎉
