0:48 I don't think Holst uses that key signature in any piece. Looks like a very strange mode.

all three of them are in Jupiter however you are correct that it is definitely not in Mercury as I can find

In the beginning section of the piece, the 1st violins, violas and 1st harp are in Bb. The 2nd violins, cellos, and 2nd harp are in A. All the other instruments have no key signature. You can see the full score on IMSLP

technically if you look in the clarinets, clarinets 1 and 2 play in A and clarinet 3 plays in Bb

in venus, the key signature is Eb and switches to F# later in the piece
in mercury, the key signatures are A and Bb as said earlier
in jupiter, the key signature is C and switches to Eb later in the piece
iirc these are the only movements that contain key signatures
