Superb & fantastic kalan preparation! I have been making kalan this way fr the past 27 years - have enjoyed it till date. Making it this way does not curdle the dish at all! No fail method. Mami we make it exactly like how you explained the traditional way of making kaalan. I have a question: do you use valicha ennai in all your cooking? Thanks a lot for this recipe mami and Vidya.
Yes - it's ok to boil curd/ yogurt this way. I have done this way forever. Even in North Indian dishes - they heat/ boil curd alongwith the masalas. But Ayurveda does not approve heating curd.

Palakkad people do not add or grind Jeera in most of their dishes/ recpies.
Pure Kerala Malayalam people add Jeera in almost all of their dishes.
