Omg you said 3 tbsp oil and it was more like 1 cup haha. I love crispy corned beef hash! A tip for you...to soften my flour tortillas, I hold them with tongs over the open gas flame(low) from my stove burner and just keep turning them. Works well and you get some char marks. Yours look SO good!!
