Ingredients below:
Dish (serves 1):
1) Half a cauliflower
2) Half a red onion
3) Half a red pepper
4) Handful of mangetout (or substitute with babycorn - works well!)
5) Firecracker sauce (ingredients below)
6) 1/2 spring onion chopped
Firecracker Sauce (serves around 5-7 portions, depending on amount of sauce you like in your dish):
1) 6 tbsp light soy sauce
2) 2 tbsp chinese rice wine (shao xing)
3) 1 tsp sugar
4) 100 ml oyster sauce (see note 3 below for substitutes)
5) 200 ml sriracha sauce (add a little more if you like a 'kick')
6) 3 1/2 tbsp fish sauce OR vegetarian fish sauce
7) 1-2 tbsp chilli flakes
8) 160 ml runny honey (add a little more if you prefer less spice)
9) 110 ml sweet chilli sauce
10) Wagamama use 100 ml of oil in their sauce *I did not put this in*
For garnish:
1) Toasted sesame seeds (black, white or both!)
2) Chilli flakes
3) Lime wedge
4) 1/2 chopped spring onion
5) Sesame oil (drizzle lightly over curry)
---------------------------------------------------------------------------------------------------------
Note 1 - point 1)-3) under firecracker sauce above, makes roughly 100ml of yakitori sauce. Alternatively, you can buy ready made yakitori sauce (link above).
Note 2 - For the yakitori sauce, you can substitute the 2 tbsp of chinese rice wine with 1 tbsp of mirin and 1 tbsp sake (or dry sherry)
Note 3 - I actually only had 50 ml oyster sauce so I added this with 50 ml of hoisin sauce as a substitute and it worked well! You can also substitute the 100 ml oyster sauce with 100 ml of mushroom sauce/vegetarian oyster sauce (links above).
