Good day, I would like to know why don't we add, in the family of sub-dominant & dominant(IV & V chord), the 3rd note. For example: for sub dominant which is the IV. Why don't we substitute in the order of IV;Vii & iii. Then for the dominant(V) use V;Vii & iii. I just got a little confused as I'm starting from scratch. Please help.

Those chords are relative to each other (relative major and relative minor) so they can easily be interchanged. Thanks! -Chad

It can, it's just not used as often: it just depends on the context; the sound of it within the progression.
How do we choose which substitution to use??
