    Probably one of my favourite meat dishes. I still have memories of my late grandmother who I'd stay with over the weekend. After church on Sundays she'd usually make a roast for the afternoon but in the evening she'd deep fry some guinea fowls. Unhealthy for the heart yet heavenly to eat. I miss her so much. This video just brought about some happy memories

    Wing shooting in South Africa is heaps of fun and can be very challenging.
    But the experience and the great table fare makes up for the distances walked

    As soon as the guineafowl drops to the ground and you have in hand , gut it asap, rinse the cavity out with fresh water .Then rub course salt ( always take a bag of it with on a hunt)onto the exposed flesh and ribs .This keeps flies at bay and also preserves it while you hang it by the feet in a shady place out of reach of nuisances like cats n dogs .Its gotta hang for at least 48 hrs minimum if you desire tender soft meat once you have got it on the table . You do not pluck these birds ...you simply "take off its jacket" after its hung for 2 days .The skin and feathers come off easily .I prep a guineafowl for the pot in 5 minutes flat using this method . Par -boil it first in a solution of water and salt and fine cloves powder which is sprinkled over the skinned bird .15 minutes should do .Now its ready for the oven ..i imagine the rest you are familiar with. ( more cloves on the bird while roasting )

    Nice, I Hunt wild Guinea Fowl In Dominican Republic when i go on vacation, But there are not as many as there.
    There is only small group of 10 or less they are really hard to hunt because they are in the bush
    It is like an impossible mission to hunt one of them.

      we marinade them and put them in the oven. They are very tuff if you do not cook them right
