I just tried this and it was super simple and really good. I’ve never cooked wings this high, but it worked well and gave a nice crisp skin. Did not coat them, we ate them rub only and they were a hit.

I’ve only ever grilled / smoked anything on my Webber kettle so when I tried out your guide on my brand new PitBoss 820 SP, I was mind blown by how easy and relatively hands free the whole process was. I don’t even smell like smoke!!! Anyway, this was an amazing guide and my wings came out incredible . Very first cook on the new pellet smoker was an absolute success thanks to you man!❤️
I use a smaller wood chip smoker. I set it to 275F but the temp tends to fluctuate between 250 - 275 so it's not a constant 275. I add wood chips (cherry & hickory or cherry & apple) at the start and again 1 hour later. Total smoke/cook time is about 2hrs & 15 minutes give or take 5min. They come out great! Pro tip: pre brining your wings then patting dry before you add your dry rubs/marinades makes them taste even better.

Now don't forget, you have to have some blue cheese for those wings -- NO ranch dressing! As we say here in Buffalo, ranch is the devil's dip. Though no dip for really good wings is completely fine, sometimes you don't want to mess with perfection., but still, NO RANCH!

I think a lot of people get stuck on the “165” line and forget that wings can render so much more fat and connective tissue and STILL be juicy but unlock SO much more flavor! Same with thighs and drumsticks

Okay, Brother ~ I've been using cornstarch to crisp my wings cuz they'd been coming out too "rubbery!" 🤮 But I'd only been turning them once! So I'm literally throwing some wings on right now w/o cornstarch! 🤞🏽 Wish me luck!
I semi taught myself the way of smoking food. Always had an issue when cooking wings however this time and temperature changed the whole ball game for me!
I use a Z pellet grill; 350° dry off wing moisture with a paper towel. Mix 2 teaspoons of no added aluminium baking powder with 3 tablespoons of Rib Rack BBQ rub. Add the rub and baking powder to a large plastic bag. Add the wings, shake to coat. Grill 15 minutes, turn and grill another15 mins. Turn on last time and grill 10 minutes. My husband cannot get enough of these crispy wings!
I usually cook my wings on the grill at 275-300 degrees and skin side up so the skin dries up for about 35-45 mins and then flip once and good for another 15 and they’re crispy.
Instant read thermometer is crucial. Once you have some experience using it, you can tell by the flexibility of the meat if it's done. Best $15 bucks you'll spend.
Beautiful wings! I found that Blues Hog sauce at Walmart and it has high fructose corn syrup and industrial seed oils. Do you know of a brand of wing sauce that you like that isn't goyslop?

If I had one take away I think I Had them on to long but that's my fault. I may try cooking them on the second rack next time. They got kinda burnt a little towards the in. That’s interesting. I have been doing mine to between 170 and 180 degrees and they are tender, but I’m going to try it to 190 to 200. I have been wingin it all weekend as I made several batches this for our Halloween party.

Exactly how I’ve been cooking wings lately. Cooking the sauce down on the grill makes the best wings. I love sauce but don’t like really wet wings

Get yourself an instant read thermometer. It's as important as the grill. Cook to 195, for fall off the bone tender.

Yes it is, but one side has more fat than the other and you can clearly see it in the video.
I cook mine until the bone of the drum starts protruding. Seems to be a good indicator.

There is one side that has a much thicker chunk of skin. That’s what I meant, and is pretty common sense.
