    Ingredients -
    1kg (2.2lbs) - Beef Bolar Blade or Chuck, Diced
    25g (0.88oz) - Plain (All Purpose) Flour
    3 Tbsp (60ml) - Olive Oil
    3 - Brown (Yellow) Onions, Quartered
    2 - Celery Ribs, Sliced
    250g (8.82oz) - Swiss Brown Mushrooms
    5 - Garlic Cloves, Sliced
    150ml - Red Wine
    650ml - Beef Stock
    10g (0.35oz) - Thyme, Roughly Chopped
    1 Bunch - Baby Carrots, Washed
    Seasoning To Taste
    Crispy Garlic Mash -
    1kg (2.2lbs) - High Starch Potatoes, Peeled
    5 - Garlic Cloves, Minced
    150g (5.29oz) - Unsalted Butter
    150ml - Full Fat Milk
    Seasoning To Taste
    Crispy Potato Skins - • The Best Roast Potatoe...
    Notes -
    If you can’t consume alcohol, red wine can be substituted with beef stock. Even though the beef stock is already used in the recipe, still use the 150ml to deglaze before adding the rest.
    To make the mash extremely smooth, press the mash through a fine sieve into a bowl.

    Hello 😊I made this dish tonight and it was DELICIOUS 😋 used exact ingredients minus the alcohol because I have been sober since 5-10-2015 ❤and every bite was incredibly scrumptious 😊

      Fun fact: when you boil alcohol, it's no longer alcoholic. you can add alcohol to your meals and still stay sober. 30 minutes of cooking reduces alcohol content by 10%

    Literally making stew right now and following this. It's amazing how simple stew needs to be for it to be great!     I watched this and off to the store I went. I used Cabernet sauvignon. It's the best stew I've ever tasted. I have never used wine in stew. It makes the dish. It totally transformed the meal. It was so so soooooo good. Thank you.

    Hi from Ireland (the home of the stew) Looks great, well done. We don't usually add mushrooms to Irish stews here, but I think they definitely work well. Nor do we add red wine - which I also think works well. But we sure add carrots and celery, beef and beef stock.
    What we do sometimes add is a little guinness. Not sure if you've ever made a guinness and beef pie, but it's really nice and I can see you'd be well able to make your own competent variation. Thanks for the vid.

      Generaly dark beers come good with stews - porters, bocks... plenty of room to experiment :)

    Made this tonight but used a pressure cooker ( huge time saver).
    Upped the stock to 750mls and red wine to 250 mls, reason - pressure cooker needs minimum of 1 litre fluids. Cooked for 40 mins then depressurised and added carrots and blasted on high (no lid) for 20 minute reduction..
    No sign of onion, liquified under pressure.
    The beef was perfectly tender and the overall flavour was spectacular!
    I’ll drop ten minutes on the next attempt, I think 30 minutes under pressure would be enough ….

    I made something similar in slow cooker the other day. Onion/celery/potatoes on the bottom - meat on top, 8hr cook, and removed potatoes to mash separately at the end. They absorbed all the flavor during slow cook and became so frking tender and delicious.

    I always chop my carrots up with the rest of of the veggies when I make this dish, but the whole carrots really do add to the presentation! Going to be adopting your style going forward. Less chopping and looks much better.

      Unless it describes a different consistency for carrots as for pasta of course.

    Hi Jack ! Adding some nutmeg- or cinnamon powder to the mashed potatoes will also make a huge difference. That's the way we eat that in the Netherlands. Looks like a great stew.

    Great job and so delicious!
    I deglaze the pan alot earlier with some balsamic vinegar and instead of so much butter in the mash I use cheddar cheese.
    A tiny pinch of chilli (smokey types or Szechuan), evevates it, just enough that you can't recognize it but still know it's there. Maybe slightly less.
    A single square of 80% choc.
    This dish wouldn't be complete without braised spinach/chard/kale etc - the raw bitterness creates the perfect storm on the plate.

    I did a slowcooker version of this without the fancy gravy, and the celery really is a great addition

    Here in Belgium we make the beef stew with brown beer (preferably a Trappist) instead of red wine. Also has a great taste! Haven't tried it with red wine though, I'll follow your recipe next time. I'm curious!

      Beer in this is really good! I was going to use stout but swapped it to red wine last minute as I had ingredients to use up.

      Try about 3/4 red wine and 1/4 port

      That's just the Belgian version of boeuf bourguignon. This recipe here is basically simplified boeuf bourguignon. I'd also guess, a beer stew is probably better with a mix of pork and beef, as beer and pork bring out more flavours than beef alone. I studied in Belgium for a year and it is my belief they have the best kitchen in the Northern EU and very high culinary standards. Belgium is severly underrated as a food country, but the amount of styles and high class restaurants there speak for themselves. Also let's not forget pralines and patisseries. Some of the best (and most unique looking) cakes I also ate in Brussels. It may have its share of problems as a country, but the food is Class-A in Belgium. And the people making it are excellent, mostly traditionally (French) trained cooks! An all around wonderful experience when it comes to food.
