Wood Ear Mushroom Salad Recipe

    These wood ear mushrooms look weird and the texture is a little weird too. It’s kind of like kelp....Don’t be scared of this - It’s actually very healthy and delicious. When my sister visits me, she always requests this dish. So I decided to make a video.

    *INGREDIENTS*
    - 30 grams of dried fungus [30克干木耳] (Amazon buying choice: geni.us/Uyc0V)
    - 4 ounces of cucumber cubes [4盎司青瓜丁]
    - A hand full cilantro [一小把香菜]
    - 1 hot chili for garnish [一个红辣椒]
    *FOR THE SAUCE*
    - 1/2 tbsp homemade Sichuan chili sauce [半汤匙自制四川辣椒酱](can also use fresh chopped chili and minced garlic)

    - 3 tbsp of soy sauce [3汤匙生抽]
    - 2 tbsp of Chinese black vinegar [2汤匙陈醋]
    - 2 tsp of sugar [2茶匙白糖]
    - 2 tsp of sesame oil [2茶匙芝麻油]
    - 1 tsp of ground ginger [1茶匙姜蓉]
    - 2 tsp of Sichuan peppercorn powder [2茶匙花椒粉][recommend buying choice: geni.us/T6Pp]
    *HOW TO MAKE*
    - First, you need to soak the dried black fungus for 1 hour. We only need 30 grams of it. Because once you soak them in the water, they go crazy. Became so much bigger.
    - The fungus I used is the small type call cloud ear. If you are using bigger ones, you need to rip them into three-quarter inch pieces.
    - Boil it for 3 minutes. While waiting, have some ice water ready.
    - Take it out and Put the fungus into the ice water
    - let is sit for 5 minutes.
    - 5 minutes later. Drain it and then dry it up. Let’s make the sauce.
    - 1/2 tbsp of homemade sichuan chili sauce. If you don’t have it, you can also use freshly chopped hot chili and minced garlic
    - Add 3 tbsp of soy sauce, 2 tbsp Chinese black vinegar, 2 tsp of sugar, drizzle in 2 tsp of sesame oil, 1 tsp of freshly ground ginger 2 tsp of Sichuan peppercorn powder.
    - If you don’t have peppercorn powder. Yes, you can skip it. But if you do a chance to buy this, strongly suggest you try it.
    - Now all you need to do is mix everything together. The fungus, the cucumber, some cilantro and the sauce.
    - One important this is to taste and adjust it. You probably need some salt or if it is too salty, you may want to add more sugar and some water to balance it out.
    - There you go, your black fungus salad is done.
    It is sichuan style cold dish. So obviously, it is spicy. Also, it has pretty strong sour and salty flavor, Which are balanced by the fungus and cucumber. This dish usually served as an appetizer. It will be gone in 1 minute. Seriously, this is very popular in many restaurants in China. It is simple to make and taste delicious.

    This and snow fungus were my favourite salads growing up in South of Russia. We didn't have a Chinese community in my city but we had a lot of Koreans, so a lot of spicy and fermented dishes were popular.

    This recipe was delicious, thank you!! I didn’t have the time to try the full recipe from scratch, but I used about 1tbsp of Szechuan chili oil/sauce from the grocery store… I can finally enjoy my favorite black fungus salad like at restaurants!

    I found a load of these growing wild on elder trees in my neighbourhood. They're not too difficult to identify, there aren't many poisonous mushrooms that look similar (though of course be very careful when hunting mushrooms!) I was planning on putting them all in hot-and-sour soup, but I think I'll give this a try as well!

    In Northeast India it's one of the most loved mushrooms . In packed in plastic and sold for 20,50 rupees and in the villages you can get a Kilo of the jelly mushroom for 1000 rupees.
    I work in the mainland so whenever I go to my hometown I used to buy a kilo and take it to the mainland to enjoy it because Jelly Mushrooms aren't eaten rsod in mainland as theyare mostly eaten and sold in Northeast India.

      If you like umami flavor and tolerate dairy, slice the portobello mushrooms 1/4" thick, add salt, just a little splash of water, put a lid on the pot and set medium heat. Very soon the pot will be full of liquid from the mushrooms, that's when you remove the lid and stir until most of the liquid is gone. Take the mushroom out and add full fat sour cream. I never tried it but adding some soy sauce would probably make it even more umami. Enjoy!
      P. S. The reason to omit oil is I noticed this way the taste is really pure and not dry at all with the cream. Frying them makes them somehow mediocre for me.

    My only previous experience with black fungus was strip-form in ramen. I like experimenting making food, and was thinking about black fungus but not wanting a whole huge bowl of ramen with barely any BF. There's an Asian Market two minutes from my house and they HAD IT!! Not even $2 for a bag! The ramen strips I had were very flavourful and I was trying to see if it's bland on its own or not. Your video helped a lot!! I'm going to soak this one giant fungi-top in water....but I'm going to add soy sauce, ginger, oyster sauce, garlic "juice," maybe some hoisin, I have homemade allspice as well...so the mushroom itself is flavoured as it soaks. Thank you for being the ONE PLACE that said the mushrooms alone are bland! Lol
    Edit: also dried bonito flakes!! One heck of a tea bag for my black fungus 😍

    Other than size, is there any other difference between these cloud ears you use, and the big fungus (with white back)? I used the big fungus, but was a bit thicker than I like.

    Where I'm from, we called these "Elephant Ears" because they tended to be large and 'floppy'. The locals know it as "pepeiao" or 'ears'. I've used it in Japanese main dish such as 'nishime', a kind of stew, never as a salad-should be good! Never noticed the sliminess before, just the crunchiness. ummm

    Awesome recipe and super simple. I hunt wild mushrooms and we have something that grows wild here called "Wood Ear", which is a similar fungus to what you used in this recipe. I love these mushrooms so this is definitely on my list. By the way, these are often used in Hot & Sour Soup in local Chinese restaurants here. Do you know how to make this?

      I live in the North-Eastern United States. In Chinese the Hot & Sour Soup is called "酸辣湯". Here's the link to the English Wiki: en.wikipedia.org/wiki/Hot_and_sour_soup
      Actually, my two favorite soups are Hot & Sour, and Wonton Soup lol

      In the UK we call them wood ear mushrooms. It's amazing that they look so much like ears that people across the world have called them some variation of ear 😂
