Dear Ben, your cinnamon rolls are by far, the best out there, whereas I thought mine were best! Delicious, superb,...the middle butter/brown sugar melts and covers every piece of the dough, making the flavor extend throughout the whole roll, rather than just on top. And the dough is tender and stays that way the next day, if there is any left over. Bravo! Thanks so much for all your help.
They are so outstanding that I'm going to make up some batches for the freezer, to surprise my son when he comes. This will put a smile on his face. @@ultimatefoodgeek
I’m a newbie. Pls tell me how you froze the rolls? It’s just my husband and I so while we probably COULD eat them all, we definitely should NOT eat them all! What directions would you give for freezing?
@@pamelamatthews1373I just wrap about 4 or 6 rolls in foil, and put the packages in a zip bag. When ready to eat, warm the foil package in the oven @300 for about 10 mins.

Wow! First time watching Ben’s videos. I was just looking for a Sourdough cinnamon roll recipe. And everything about this video recipe was amazing, everything has an explanation. I literally used my starter out of my fridge without feeding it for a week, left the dough in my countertop for 12hrs and the next morning shaped and baked those delicious cinnamon rolls. They were superb! Amazing taste and consistency! Sharing this to my sourdough friends!

Hey Ben Starr! Thanks for making this video and especially thanks for the scientific explanation behind the process of creating a healthy sourdough starter! After watching, i had the intuition to rinse my spoons in vinegar before mixing my starters to both clean my spoons from any dishwasher detergent, and to raise the acidicy of my starter. So far i had incredible results. Within 6 days i had a starter that almost tripled in size once i fed it to 100% hydration.
lol, I use the kitchenaid stand mixer because I have carpal tunnel so bad that I can no longer knead bread. After that the parts go in the dishwasher. I love this recipe, planning on working some up later next week! Thanks for sharing!
Cold kitchen and the butter was left out for over 20 hours. It was soft enough to fork. I really had to work at it to incorporate the sugar (sucanat instead of store-bought brown sugar). I couldn't really spread it on the dough (which was raring to go!) cuz it started to tear it. So, I left dollops as evenly spaced as I could. I just took them out of the oven and there is a beautiful soup of brown goo all over them! I made the icing with half date sugar and half powdered. Lovely treat! Slighlty sour but soft and delicious!
MY grandma used to leave milk in a jar lightly covered, or lid on it, for days, and used to make us pancakes with it!!!! She only used whole milk though, not any 2% or anything like that. Love your videos and I'm going to be making your starter here this week!!! This will be one of my next projects after I get my starter done and a loaf made!! Thanks for being you!!! 😊
I love the amount of detail you put into your explanations! It's so helpful to understand the "why" and actually ends up simplifying so much of the process in the end! New subscriber and big fan here!
Thanks, Carol! It's funny, I occasionally get the viewer who comments, "Too much talking." But I guess those folks will never UNDERSTAND the full concept, and are doomed to repetitive failure.
I have always been a little intimidated to make cinnamon rolls. I'm new to the sourdough journey and have lots of discard to use. You made it look so easy I decided to give it a go. These are amazing and so easy to make. My grandson told me to tell you THANK YOU! He loves them, we all love them. Will definitely be making them again.
Making these tomorrow. As well as a boule of Sourdough bread. I come from a long line of bakers, butchers, and chefs. Worked in restaurants growing up as prep cook, after I learned how to cut veges, meat, and crack eggs on handed into 5 gallon buckets with no shells. Was encouraged not to be a chef. Went into Medical but still love to cook and love challenging recipes. Especially non-American food and wild mushrooms, and game/fowl. Getting ingredients is the most fun.
I so love your video, always so full of info, and thanks for he videos and written recipes, and I always have a little chuckle too. It's so good to have you back...You've been missed too
Very easy recipe! I was nervous when I took them out of the oven and saw all the juiciness in the bottom. But came back to the video and saw it was expected!! Whew!! The house smells amazing and we can’t wait to dig into them. Thank you for a wonderful recipe!!!
I started my Lazy Person's Sourdough starter yesterday and I think these cinnamon rolls will be the first thing I make when it is ready to go!! They look sooooooo delicious! BTW, I couldn't find a way to keep my starter warm enough in my house and I had to make housecalls today, so I put it inside my insulated lunch box, padded it with towels to keep it from tipping over and put one of those "Hot Hands" packets inside with a thermometer. It stayed between 72 and 77 degrees all day. I just swished it versus stirring during the day.
Just made these and they turned out great. My husband had 3 😮. Never had sourdough cinnamon rolls before, the sourness makes them taste almost like apple pie.
Unsalted butter has less/no water content. That’s why it’s used for baking and cooking in general. If you want to use butter and oil together. Or alone for frying, you use unsalted . I’m have used lemon juice to full fat cows milk when the recipe calls for buttermilk . I mix it the night before and it is ready to use the next day. Never had an issue with it and always improves the flavour of my baked goods.
ALL butter, salted or unsalted, contains about 16-18% water...the same amount as salted butter. Butter does not vary in water content whether it is salted or unsalted, the water content only varies by brand. Adding ANY acid to a recipe will improve flavor. But adding lemon juice to milk does not make buttermilk. And the lemon juice does not need to be added to the milk at any point...they can both be added to the recipe separately. Yes...milk does thicken when lemon juice is added to it, but this doesn't affect the texture of the final recipe AT ALL. You can simply add your milk and the lemon juice to the recipe and you'll end up with the same thing. No need to mix the night before. The flavor will be DIFFERENT than if you had used buttermilk, which contains lactic acid, rather than the citric acid found in lemon juice.
Will definitely be trying this recipe. Thank you for your SUPER educational videos!! I've learned so much about Sourdough just from this one video vs. all the others I've watched!!
Thanks so much for this recipe! I made them (so easy) and they came out great! Every recipe of yours I've tried is a winner. I appreciate the information on maintaining Buttermilk, as I used to only buy the box stuff, but this takes baking with buttermilk to another level!
I think this video was produced great! My last loaf of sourdough was way too much trouble to make and it came out terrible. Looked pretty but was not good. I promptly put that starter in the fridge and forgot about it. You sir, have allowed me to dig my starter out of the fridge (3 months) and make a delicious loaf of sourdough bread. Came out perfect! Will be doing these and loaf bread next! You have given me hope for making bread!
I followed every step, including running out to the store for buttermilk (shame on me). They are right now 30 minutes into their 1 hour rise before the hot oven. I'm so excited! More to follow! BTW, I baked a loaf of sourdough last night...thank you Ben Starr, you are freaking awesome. My bread is beautiful and delicious!
They are fantastic - currently have a sourdough loaf in my oven, and just refreshed my buttermilk yesterday! Thanks! (Can't wait to see what you have next)@@ultimatefoodgeek
I can't watch this before lunch, I had created a playlist with different videos from this channel, but I realize that was a mistake. Love that the focus is to keep it easy, and not to do what ever it takes to make it delicious. It doesn't matter how delisious it is, if it takes more work, I'm not doing it.
I made these last week and needless to say they disappeared so fast. I’m working on my second batch today and I am so happy to have this skill now. Thanks for your efforts to share this awesome recipe!
Thank you Ben. I really appreciate you more than you can know. Your sourdough recipes for lazy people are just what I need in my busy life. Hoping you will make a pizza for lazy people video. I like your style and your humor. It keeps the videos interesting and entertaining at the same time. Anxiously waiting for more videos!
I've had my weirdough in the fridge several months, just took it out earlier and it's sitting on the counter getting ready to make into bread tomorrow...first time using your recipe, first time using cold SD, first time not feeding before making....so it'll be all on you tomorrow 😅....then I want to give these a try, they look so yummy!
Loaf? This is a cinnamon roll recipe. If you're having trouble baking a loaf from one of my other videos, please post a comment on that video describing what happened. I'm happy to help. But I have no clue what you made, since this is a cinnamon roll video and you mentioned a loaf.
Another enjoyable and informative video. Thank you very much for your time, efforts and humor. Love the informative facts and tidbits. Oliver is also adorable.
Precious Oliver crossed the rainbow bridge in September, just before his 16th birthday. I am still devastated...I bawled myself to sleep last night, almost 2 months after we had to make that tough, tough decision. He was my best friend, my constant companion, the love of my life. I haven't made a video since then. But I'll be back soon enough. It's lonely in my kitchen without my fuzzy friend.
This video was my first introduction to your channel. I am a scientist, so I absolutely love how detailed you are making this recipe! You answered every question in your video, as well as dispelled a few myths. The other commenters were spot on with the comparison to the Alton Brown show. Don't change a thing! Subscribe
Love that you’re back! Please please 🙏 do a video of your famous red velvet cake (no food coloring or beets) recipe? I’ve wanted to try it for years but I think a video showing the natural red cocoa color would be so inspiring!
LOVE! Third time making these! It’s harvest time here in Michigan and I had some apple butter left over from canning. I opted to use some in place of some butter in the filling just because I had this fresh wonderful stuff available. Outstanding, you sir are my favorite when it comes to anything sourdough, thanks for making it fun! My question is can these be frozen, not that there’s much chance of any leftovers but with it just being a two person household I wondered if I could freeze them individually. Thank again for being you!
I just made these and have them cooling on the countertop . Thank you for this neat recipe , and your instructions are for real world scenarios! My SD bread is almost at the end of bulk fermentation Will be shaping soon!
Ben! We're going to need a serious exercise regimen having made these delicious cinnamon buns today! When I first tried these buns soon after they were frosted , 30 minutes or so, I was missing the salt in the dough. But, when I came back later to wrap them up for the freezer, I took another taste, (couldn't help myself) and the flavor was PERFECT! Really! I guess it took a little time for all of the flavors to blend together from the caramelized sugar, soft pillowy bun, and the cream cheese frosting. I had been looking for a great recipe to use my sourdough starter discard. Wow what a surprise to come upon your recipe. I'm definitely checking out your other recipes and your sourdough starter maintenance videos.
I made these yesterday and it was such an easy process. The only mistake I made was I rolled my dough out too thin. It still worked out but I will definitely measure the next time. They are delicious. The only thing I would do differently for us is less sugar. It's not a flaw in the recipe it's a personal choice. First time I have used dental floss for cutting dough and I loved it! Thanks for another great recipe for the lazy Ben!
Hi Ben, love your stuff. Just started my sourdough journey so I suppose I’m one of the lucky few who discovered that conventional sourdough method isn’t the only, or even the best, way to go about it. I had been collecting sourdough discard over two-three weeks and was delighted to be informed I already had decently aged (unfed) starter to use your method. I used that for this recipe. However, the consistency when mixing all the ingredients produced a very sticky dough. No matter how much flour I added it stuck to everything. I double checked the amount and I don’t think I messed anything up with the recipe itself. I use a scale for my starter so I don’t think the hydration is off. I started the rolling process 16 hrs after I formed the dough and it (from my limited experience) looked to have doubled, but was still super sticky coming out of the bowl and I could barely stand up (swirl on top) the individual rolls bc they weren’t round (or structured?) enough. Why might I have produced this consistency with my dough? They taste great but it just ended up being more like a pan of indistinguishably shaped cinnamon and dough than rolls. Sorry for the long comment. TIA!
What's great about this recipe is you can build off it. Make a spiced apple or pear filling or a cherry chocolate. So many ideas using the same recipe. Cheers 🤙
You are great!! I made my 1st sour dough loaf by watching you and it turned out PERFECT!! Now I'm going to make your cinnamon rolls...after I go buy some buttermilk🤣

I made your method of making sourdough which was really good and easy. Thank you. My next one will be this cinnamon rolls.
This recipe seems pretty straight forward so I thought I’d give it a try. As I watching the video, Mixing the ingredients I realized that I didn’t have any brown sugar so used what I had: organic brown coconut sugar for my dough. Tomorrow morning I’ll pickup some brown sugar for the filling portion but I’m Hoping I didn’t ruin the outcome 🙏🏻🤞 I have a planned playdate with my nephew tomorrow and thought this would make a nice treat 😳

Happy to see you posting again!! Thanks so much!!
Just watched Dr Berg tell me the dangers of eating carbs and right next in line is this vdeo 😂
😂😂😂 been doing carnivore for 8 months and just now found this also… what is the world trying to tell me🤦♀️😫
Hey but im sure dr. Berg would also say if u are gonna eat bread, sourdough is the absolute best for u.
Dr. Berg isn’t a real doctor lol but I love that this popped up for you after a keto video 😂
Ben you are a real cook we all like easy. Love you. Will try these.
I'm a big forager! Hoping to produce some morel videos this season...
Ben you have helped us so much, thank you, you rock!
I so love your video, always so full of info, and thanks for he videos and written recipes, and I always have a little chuckle too. It's so good to have you back...You've been missed too
So glad you're back on your channel. I've learned so much from your show
Very easy recipe! I was nervous when I took them out of the oven and saw all the juiciness in the bottom. But came back to the video and saw it was expected!! Whew!! The house smells amazing and we can’t wait to dig into them. Thank you for a wonderful recipe!!!
I have made this recipe twice now. A terrific recipe. Easy to follow, and the rolls are stunningly good! Thanks Ben!
Cool! Let us know how it turns out.
This is without a doubt the best recipe for cinnamon rolls. I’ve learned so much about sourdough and buttermilk from you. Thank You!
Made them - by far the easiest ever! The dough rolls out with ease, and best of all, they taste fantastic! Thanks for another great recipe.
You're the FIRST person to report making them, and not just watching. Thanks! Glad you like them. :)
So glad to see you, again! I have shared the buttermilk video so many time and now I can't wait to try these! Please, keep sharing your knowledge!!!
The loaf was a flop
Loaf? This is a cinnamon roll recipe. If you're having trouble baking a loaf from one of my other videos, please post a comment on that video describing what happened. I'm happy to help. But I have no clue what you made, since this is a cinnamon roll video and you mentioned a loaf.

Thank you so much Ben, I LOVE LOVE LOVE your take on Sourdough. I will follow your recipes any day!!!
Another enjoyable and informative video. Thank you very much for your time, efforts and humor. Love the informative facts and tidbits. Oliver is also adorable.
Great video. I’m so encouraged to make these. They look absolutely perfect!
And by the way Oliver is adorable! ❤️❤️❤️
So Glad I found your channel, Love your humor!!!!! Thanks for sharing I learned a lot. I love sour dough and do as you do; only feeding when needed.
I smiled through the entire video! Looks so good and you’re so much fun to watch! Thank you!
Delicious - used half of the filling recipe to reduce the sugar content and they came out great. A nice treat - thank you!
Loved your glee when tasted the nubs! Thanks for the great lesson!
This video was my first introduction to your channel. I am a scientist, so I absolutely love how detailed you are making this recipe! You answered every question in your video, as well as dispelled a few myths. The other commenters were spot on with the comparison to the Alton Brown show. Don't change a thing! Subscribe
Wow, thanks!
Love that you’re back! Please please 🙏 do a video of your famous red velvet cake (no food coloring or beets) recipe? I’ve wanted to try it for years but I think a video showing the natural red cocoa color would be so inspiring!
Great idea! I actually thought I had already done this, but apparently I haven't. It's on the list!
Certainly!
One of the most delicious things I have tried. Thank you for the recipe and guidance. ❤
I made this and my husband does not like cinnamon rolls, but he ate 3 of these the first day! Excellent work.
Btw you had me dying with the dog 😂😂😂😂😂
Loved the video. And your great tips. Glad to know someone uses buttermilk like I do. Will be trying your recipe this week.
Made these for my family this morning and they were Delicious!! Best sourdough cinnamon roll recipe hands down 😊
Recipe right there? Simple, clear instructions? Oh I'm subscribed now!! Looking forward to watching many of your videos. Peace and Love from RI
You are my new favorite! Love the science of cooking!!
I am new to sourdough baking. This was easy ti make and amazing, a big hit!!! Delicious!!!
Made them!! Best cinnamon rolls!!! Thank you for simplifying things Ben!!!
This is so interesting! Thank you. I love learning stuff when I thought I’d just be watching a random cinnamon roll video.
Glad you’re back! Bake my rolls this AM….excellent! Thank you!
LOVE your video’s very honest and down to earth and funny!
TIA!
No, but it sounds like I need one!
I am learning so much from you. Thank you.
I just happened to start watching your TH-cam recently because I restarted to bake sourdough bread the easy way. Haven't made it since after we were out of the Pandemic state. I love your show. I made your method of making sourdough which was really good and easy. Thank you. My next one will be this cinnamon rolls.
you are the alton brown for regular people with no time
Thank you, my Sith Lord! Alton is my spirit animal.
This recipe seems pretty straight forward so I thought I’d give it a try. As I watching the video, Mixing the ingredients I realized that I didn’t have any brown sugar so used what I had: organic brown coconut sugar for my dough.
Tomorrow morning I’ll pickup some brown sugar for the filling portion but I’m Hoping I didn’t ruin the outcome 🙏🏻🤞
I have a planned playdate with my nephew tomorrow and thought this would make a nice treat
😳
Coconut sugar is delicious and will be fine in this recipe.
@@ultimatefoodgeek turned out great. Thank you!
So glad i found your channel receipes loom amazing and you make me giggle. 😂
The face you made when talking about the cooking spray 😂😂😂 I was cracking up. Have my dough rising as I type 😋
This video (as all your videos) was so much fun to watch. Can’t wait to make these.
