A friend of mine had a similar experience. Someone had bet him $100 to chug a whole 1 Litre bottle of water without taking a breath. He got the water bottle and started to chug. He started chugging, hesitated for a second, and then continued. Once he finished, I checked the bottle out of curiosity: it wasn't water he drank, it was 1 whole Litre of straight Vodka. He spent the rest of the night passed out in a chair. He did get $300, though.

I would like to say again in 2018 that, Joel's story makes more sence if it was a potato bar because baked potatoes are normally have baco bits as a topping and I as a fully fledged Mexican can with10000 percent certainty tell you and "taco" With baco bits is not a real taco. What would have made more sence is Joel believing it was a taco bar going for the ground beef (baco bits) only to realize it was a potato bar.

I think that's exactly what happened. It's just that Joel mentioning at the beginning of the story that it's a potato bar ruins the revelation that it's not a taco bar.
He meant to start the story off by saying it was a taco bar, then revealing it was a potato bar after the bacon bits reveal.

I think Joel was initially correct remembering it as a potato bar. Because, why in God's name, would you make tacos with Bac-o bits?!
Say what you want about Taco Bell taco meat, it at least STARTED as actual natural beef. The quality of said beef was bad, and the intense processing didn't do it any favors, but it WAS a dead cow at some point.
I don't think it was actually a taco bar. I think he told the story like that because he thought at the time that it was a taco bar.

If he believed it was a taco bar, but it was actually a potato bar, then it makes sense that he saw the meat there and figured it was ground beef.

I have to say this is confusing the hell out of me Joel said that they rolled out a potato bar but that it was not the correct type and later changed it to a taco bar. Mabe this is just e but who the hell put bacon bits on a taco to me it makes more sense to have a potato bar as bacon bits are normally a topping on a fully loaded baked potato. Taco bar makes no sense why would someone put bacon bits on a taco bar . The whole story would have made sense if he had just stuck with the potato bar and all of it would make sense. Honestly, if you put bacon bits on a taco that shit is not a taco, I don't know what it is but it sure as hell ain't a taco. To reiterate potato bar makes sense taco bar does not.
Then again I'm not from Austin and maybe that's just how they do tacos this whole statement is just my opinion on the matter so it can be completely overlooked but as a person of Mexican/ Hispanic descent I had to say this. Sorry if this offends anyone in any way shape or form

This is the whole point of the story. He thought it was a taco bar with ground beef you would normally put on a taco, so he decided to eat pure beef. However, it turned out to be a potato bar (he couldn't tell at first because of how dark the set was) and he ended up with a bowl full of bacon bits meant for a potato. This is why he changes it - for the joke to work, he needed to start off with what he THOUGHT it was (taco) and not what it ACTUALLY was (potato), as him saying it was a potato bar gives away the punchline to the story.
