1 cup minced garlic
5 pcs. white onions, minced
¼ cup sliced ginger
6 kg bulalo (shank)
12 pcs. bay leaves
2 tsp. five spice powder
2 tsp. whole black pepper
8-12 pcs. star anise
1 cup soy sauce
½ cup oyster sauce
½ cup coconut vinegar
¾-1 cup dark brown sugar
6-8 liters water
fish sauce, to season
2 cups spring onions, chopped
3 cups siling labuyo, minced
3 cups toasted garlic
FRIED CHICKEN
3 kg chicken leg quarter
fish sauce
calamansi juice
cinnamon powder
ground black pepper
5 pcs. fresh eggs (white only)
all-purpose flour
chicharon
chicharon bulaklak
lechon kawali
5 cups cooked rice
