  • Shiuwen gets into the basics of tea brewing, with a focus on Taiwanese oolong. The question we get asked the most often when talking to customers is 'how should I brew this/what is the correct way to brew your tea/can you give me the proper brewing parameters'. In this video we hope to share tools to build intuition so you can tackle any tea that comes your way!

    I admire how you refuse to use a "timer" when brewing tea, reminding me of Luke Skywalker refusing to use his radar in Star Wars, using the "force" instead lol! (Perhaps it's the "Yoda" on the table.) Keep up the great work. Your channel is so helpful! 😎

    Thank you for the vid! I am so glad to hear that there is no set time or amount to brew Oolong. For me I just eyeball everything and learn from my mistakes. Actually, there is no mistake because I still enjoy drinking my tea just have to adjust. Adjusting is an adventure itself. Thanks again!

    I've been researching tea a lot lately and I'm hoping to start my journey soon. Of all the videos I've seen, this one is my favorite. I'm a software engineer and a perfectionist, so I often agonize over getting everything perfect. I'm glad I saw this video before I start because I bet it will be a lot more fun this way :)

    A great instructional,I tend to use Yixing pots ,but Gaiwan is good for first tasting.

    Amazing video! i don't think i can get help with my problem, but let me just complain a little please. I have milky oolong and i wanted to cold brew it. My favourite tea shop told me to leave it in the fridge overnight, and just observe how strong it gets, and when is it good enough for me. They also told me the same leaves can be used twice. So i cold brewed it once, and decided to do it again with the same leaves. It wasn't quite ready in my opinion in the morning, so i decided to wait few hours more. When i came back to try it, the tea with leaves has fermented and i had to pour it all away. I was so sad that i got completely discouraged :(

    I have learned to wash,or rinse tea before drinking. Gets rid of dirt,dust ect..

      Yes, rinsing of dirt can be a good reason for it.
      I used to rinse all my oolong and Puer. Then there is a period of time I don’t rinse them. Now I choose to rinse a few teas.

      @@koponomarenko that’s not a stupid question at all. In Taiwan , many GABA oolong is done in a HongShui style. And GABA Oolong has its own taste (which I am not good at describing the taste). I will see if I can find someone to describe that taste and get back to you.

    I accidentally over brewed my oolong tea, because the timer told me to brew it for 3 minutes and it tasted so bitter! Your video really helps! I’m very new to tea brewing and I think I will try your method to rely on my instincts.

      If you overbrew, try adding some plain boiling water. Keep adding a little at a time to track improvement until the point you're happy with. Most over-brewed teas can be saved that way, with decent to great results depending on the tea.
      As a matter of fact, there are methods of brewing other than gongfu and the so-called Western. For example, the Russian way of brewing tea (mostly black) is to make a very concentrated brew out of loose leaf in a teapot; leaves are never removed from the pot and just sit there, giving out all they have. Then the tea is made by pouring some concentrated brew from the teapot into a cup and adding boiling water to dilute it to taste.

      It is an infrared electric stove made for heating tea kettles.

    I would love to know how you save tea for future brewing/infusions. I think I heard that this is commonly done?

      Thank you for bringing this up. Not sure when we’ll get a chance to answer it in video so I’ll cover it here right now. After brewing, if you want to save the leaves for later, first decant as much liquid as possible. Then when you come back to it the infusion will be very short. That’s because the leaves continue to ‘sweat’ in the pot even when there’s no broth inside. Don’t place the pot in the fridge, room temp is fine. But usually good to come back to it within 24 hours. Best is to try to finish within one sitting, though.

    My question is , if i can brew only one tea in the morning, is it alright to use the same oolong tea the next mornig or it will go wrong/ taste worse than?

    I can easily make a 3 cup pot and have the final cup brew for 30 mins
