Because salt is added at the cannery as a preservative. You can soak it overnight in fresh water (refrigerated) to draw out the salt before eating if you like.

Now to make it matters worse CI and CE are pronounced as “CH” (Ciao = chow, cello = chello, Montepulciano = Mon-tay-pull-chee-ahno, cent'anni = chent-ahnee), but SCH is SK. Hence, “bruschetta” is pronounced “broo-sketta”. Don't believe me? Go to Italy and order “broo-shetta”. Peas and Lovage : )

The Ce in Cetara is pronounced the same as in cedere (to yield ). I can assure you that it is pronounced with the ce as in cheque by everybody from that region - I’d assume the rest of Italy too.

The Mediterranean sea has the highest quality seafood. Here in Greece we love them too and we cook them in the same way.
