Most baroque guitars weren't actually much like contemporary guitars at all. I think in the era Scarlatti was around for, you'd be much more likely to see 8 or even 12 strings on a string instrument than the 6 we see on guitars these days.
I think some people get their video editing inspiration watching terrible action movies and ridiculous ads online, so they think good editing actually looks like this. I think it kinda distracts from any connection between the visuals of the performance and the music itself. Fortunately, Scarlatti composed some fantastic music, so just listening is enough to make it worthwhile. But yes... Unfortunate editing choices.
