How does this impact the steering assist which asks you to touch the steering every now and again? Does the car 'assume' that there's always hand on the steering ?
Say I want to remove the cover after a year or so, would you be able to see it was on there? Will it leave any marks or wear spots on the steering wheel material below it?

No, you can remove it and restore your wheel to its condition before applying the cover

Does double sided tape leave any marks on the factory leather after removing the cover after a year or so?
The adhesive tape is not a requirement, but if you choose to use it then any potential residue left behind should be able to be removed easily.
How could you find the measurements for the cover to fit perfectly?

Original layer of the steering needs to removed before re-wraping, not wraping over a layer. This is not the right way
What do you mean? There is no layer on the steering wheel in the video. Only the original leather, which is not supposed to be removed.
My opinion would be better at first remove the cover with buttons.
The man doesn't show every thing sad it would have been a good video
