I live in Gibsons and was in Nav school with Blair Pearl in 1986.I worked coastal tugs for 40 years and had the pleasure of working with some of the toughest guys around that came out of the fishing industry.After the fishing industry fell off there were lots of guys looking for work in the towing business.

I fish and shoot with friends and the rules are, if you shoot it so long as it is edible EAT it or prepare it and give it to the neighbors, it must go into the food chain. I remember fishing in BC about t 45 years ago with thos big wooden reels. People called them knuckle busters. Unfortunately i didn't even get a bruise.but at the same yime i had no idea what I was doing and. Noone on the boat did either. Still fun though.. Just found you guuys and i do enjoy your style of video. Best of luck from Newfoundland and Labrador!
OK, I just finished the video and watched how you cooked the fish. Fantastic. I need to revisit steaking rather than cutting it into fillets. That just looks so wonderful. Great job butchering the fish as well. The Thai sweet chili was a touch.
Your very good at filming and narrating. My personal opinion. Id stick with fishing videos. U got that crazy nice boat cod boat , push it hard i really enjoyed watching all ur guys on that science trip. !!

The clarified butter doesn’t burn as easily! You know how to fry a salmon steak,,,I’m now on my way to the fish shop to see if they have any decent salmon in.
Nice salmon for eating. I like to take the scales off before I steak it out because the skin when crispy can be very tasty. I only do it on fresh wild fish, because I don’t eat the skin on farmed fish. I feel the same way as you about the shoulders and the fat on perfect sized wild fish. Always poached with fins and collar on. As kids this was always the best part on perfect sized wild fish. I only filet farmed fish. Wild fish are better steaked, or poached in chunks or whole. So much flavour from the fat on wild fish, big difference from farmed. I’m not so sure about the fat on some farmed fish.
@@Skipper_al as kids we always ate the skin on a nice fresh salmon. I fed my adult sons a nice salmon steak the other day, and the conversation was “ how tasty crispy salmon skin is “! Ahahaha..funny that you mentioned that !
I’ve been sport fishing all my long life. When I keep any food to bring home,I make sure I take great care in preserving the quality of the fish or game. All the people I hunt of fish with do the same, we treat any wild caught thing with great care and respect. I think people need to know that it is illegal to take any game fit for human consumption, and destroy it. That’s fact. I ask people if they would go to the grocery store and spend 100$ on a filet mignon or a Halibut filet, and then put it on the hood of their car for the drive home, or put it in a bag in the trunk of there car on a warm summer day? I’ve seen people do it with wild fish and game. They get it home, leave it in the freezer for 3 months, and then complain about the quality of whatever it was that they were luck enough to catch. Crazy .

Why didn’t you was the fillets off after you cut them. They were laying on the cutting board next to the blood line and fish fluids ??

I absolutely love keeping the skin and SCALES on! I like how they crisp up on salmon and I eat the whole damn thing!
