My grandma canned her own corn and loved when she would make her fried corn. She always had hog fat drippings saved up in a can. Also loved her creamed corn off the cob. She also cut fresh corn and scraped the cream and froze for later. I also helped in this process. It was nothing like these canned creamed corn, her was 100x better and creamy. My momma still does this. I love extra blk pepper too. 🤤 She even made pickled corn, it was so good. 🤤 Also picked green tomatoes. My favorite is fried green tomatoes. When no flour, we did cornmeal gravy, its really good on buttered toast. My grams and parents were raised in the Appalachian hills, where families lived off the land and cooked what was in season and canned for later. Rice and gravy was a staple for everything lol. After moving to SE Texas I married into a family( french Cajun folks) that we always had fresh greens, cabbage, beans of all sorts, okra, potatoes, corn, tomatos, peppers, radish, turnips and greens, garlic, onions. Hogs , chickens. The men hunt wild life. Had plenty of deer, squirrel and fish in the deep freezer. They even hunted gater. Even a smoke house for bacon and sausage. My husband worked in the slaughter house and would bring home, tripe, brains, sweet bread meat, tails, mountain oysters, ya know the scrapes. We stayed with his parents to help them. They were older and retired. Every Sunday it seemed like fish fry at the aunties house. Sometimes chicken, or roast. Everyone that came brought a dish. They have all passed away. I miss those days and gathering with the big family. Im older now in my late 50s and more relaxed. I do get to gather with my folks, they are still alive in their late 70s.
I have been looking for an old fashion fried corn recipe a very long time. They got all these new ways, new additions to it. But yours is what I can remember watching my grandmother use but I wasn't sure. But this is the wa. Thank you! I subscribed to follow your other recipes. I know they are delicious.
Mattie, you cut corn off of the cob the way my Mom did - so you must be doing it right. I start the cut an inch or two down, as I hold onto the top. Tip the cob over and finish. So far, no finger tips in my cut corn. Courtesy of Half Vast Flying
