Game of Thrones "Shade of the Evening" | How to Drink

  • On this episode of How to Drink, I’m making a cocktail that was inspired by Game of Thrones called the “Shade of the Evening.” I thoroughly enjoyed making this cocktail by using some of the techniques from Dave Arnold like Nitro-Muddling, which was so much fun. Though my version may not be the exact drink that Dany drinks, it is still delicious and has me feeling like I can conquer whoever. So if you’re as big of a Game of Thrones fan as I am then I highly recommend trying this drink out! Cheers!
    Described in Daenerys IV of a Clash of Kings thus:
    "Dany raised the glass to her lips. The first sip tasted like ink and spoiled meat, foul, but when she swallowed it seemed to come to life within her. She could feel tendrils spreading through her chest, like fingers of fire coiling around her heart, and on her tongue was a taste like honey and anise and cream... like red meat and hot blood and molten gold. It was all the tastes she had ever known, and none of them . . . " We're not going for that exactly, more something that tastes pretty good with a general nod in the direction of whatever all of that was. Now in making this drink I use liquid nitrogen in a technique that Dave Arnold developed called Nitro-Muddling. When you muddle herbs they turn brown and oxidize and this mutes their flavors, but if you muddle them in a bath of liquid nitrogen they can't oxidize, because there's no oxygen. This also has the effect of crygenically pulverizing them into dust, destroying their cells entirely, which causes herbs and such to give up all their pigments to the drink. Dave uses the technique to make a basil margarita that is neon green and the color comes solely form the basil, it's pretty cool. That said: Liquid Nitrogen is dangerous stuff. Do not handle this on your own unless you have some training in it's safe an proper handling.
    Shade of the Evening Ingredients:
    5 Sage Leaves
    Some Dried Butterfly Pea Blossoms
    A Little Liquid Nitrogen
    2 oz or 60 ml Batavia Arrack
    .5 oz or 15 ml Maurin Quina
    .5 oz or 15 ml Demerara Syrup
    .5 oz or 15 ml Gum Syrup
    An Absinthe Rinse
    Garnish with a Single Sage Leaf

    This is really cool, but I'm a little confused. You say not to drink liquid nitrogen, but the drink has lots in it when you sip it doesn't it?

      Nope. I should have done a better job of making that clear in the video. Liquid nitrogen evaporates super fast. When you see that huge white cloud come out of the shaker as I pour in the Batavia, that's about all the warmer-than-400-degress-below-zero-celcius that the liquid nitrogen can take and the last of it fully evaporates right there. By the time we're done adding ingredients and shaking this thing there's nothing left. In the case of the glass being chilled it's common practice to throw any remnants of liquid nitrogen onto the floor where they'll harmlessly evaporate into gas almost instantly before pouring the drink. This video was already so long, it was hard to figure out what to focus on here.

      yeah, for nitro muddling, Dave Arnald suggests after a few seconds of liquid nitrogen, fine strain the frozen, unshattered herbs from the tin then dump them back to shatter. safety first.

      Liquid nitrogen is really cold, that’s what kills you. Air is mostly nitrogen

    Shade of the evening in German can be roughly translated to "Nachtschatten" and "Nachtschattengewächse" are a group of plants that contain strong hallucinogens like scopolamine and atropine. 🤓 I watched the series in German (where I think they call it "Nachtschattenessenz") so I always thought this comes from there

    handling nitrogen without wearing any safety gear would not be allowed in my country (Australia) is this because we are over regulated or Greg is pissed again , like your style keep up the good work.

      A face shield/goggles wouldn’t be a bad idea but gloves are actually more dangerous. It really just bounces off your skin. Clothes are another matter. I’m not really sure what the “law” says about it here but I doubt there is one, and I certInly didn’t care

      @@howtodrink our research department has such "regulations". The gloves we have are specialized for LN since we use big tanks with flexible metal hoses that really frost up to fill small Dewars. Lord knows someone would hang onto that hose too long and stick to it! Goggles are there, hanging on a hook in case someone wants them, but if you wear glasses you are hood.

      Counter to lab safety rules, but common thinking is it’s safer without gloves due to leidenfrost. Safety glasses would be a super good idea though

    I know the video ran a bit long for your usual already, however it'd be nice to learn a bit more from you about these less-common spirits and liqueurs. Obviously, I can just look stuff up on Wikipedia, but it's interesting to hear a live person's perspective on tastes and smells and likes, etc.

    I have a question, what would you advise to do if we were to reproduce this receip, but without risking to manipulate liquid nitrogen ? Would storing the leaves and the glass in the freezer before the making of the cocktail be a viable option ?

    Dude, I really enjoy this channel. I don't watch TV, and this drink seems shit. You make it entertaining, and my wife LOVES the show, and often has others over to watch it, I will be making this crap for them to keep them out of my hair.     Hi, great show you have here, thumbs up. Although Batavia Arrack, Maurin Quina, and gum syrup, are nigh inaccessible for me (I live in Prague), it is awesome you came up with your own drink. I love your passion for mixing and history. I guess you could make it a little more accessible by swapping the butterfly pea blossoms for simple wild blueberries. They grow here, a lot smaller than those you get in the supermarket, and their pulp is a very dark hue of purple/blue (you can't get the stains off by any means). Just a thought. Keep up the good work, looking forward to seeing more of your videos.

    This was maybe mentioned in the comments earlier, but that butterfly tea will turn bright blue when you add some acid to it.
    I use it all the time when doing hokey halloween themed drinks. Serve it purple like that with all the ingredients but the acid and then let them stir in the acid themselves.

    I was thinking of doing a shade of the evening cocktail for a game of thrones party. In the books it seems like a much more bitter drink than sweet though, so I was going to base it around campari

      I plan to at some point. The flowers are pretty cool, I didn't even get into the fact that they're a natural Ph indicator, and you can use them to make color shifting drinks. Tea made from the flowers is blue when in the presence of a base, but if you increase the acid it will turn increasingly purple-to-red.

    I don't know if this was suggested in earlier comments but, to get that "dead body" essence, a touch, a TOUCH if durian fruit might do you. It actually has a nice flavor, it just stinks to high heaven.

    Hey man! Very interesting vid, really neat looking drink, I have to say now I am inclined to buy some Maurin Quina and some liquid nitrogen. Btw. Both in the vid and in the description you are using cl(centiliters) instead of ml(mililiters) and 1 cl = 10 ml. Anyways, regards!

    I just bought Butterfly Pea powder for Soap making n also Blue Curacao for vegan jello , I didnt know thats why it has that Beautiful color , I was wondering if it was Natural color or not . I guess Blue Malva flower would work too , I saw an herbal Tea made out of it .

    We have used liquid nitrogen to make fresh ice cream at work, a side benefit of having it on tap to cool the electron microscope and other equipment. Now another use, nerd happiness is complete.

    Out of curiosity, why does floating liquid nitrogen on top of the drink ruin it? Like what does it do to the flavor/components?
