if you can find some, get pimenton de la vera! it's the quintessential spanish smoked paprika and has an incredibly rich, smokey, bittersweet aroma. it's the stuff that makes authentic chorizo so delectable.

I was gonna make lemon pepper chicken but couldn't find the lemon pepper so I found some smoked paprika my family got so I looked up a video got the ingredients found the lemon pepper but I'm already invested in this idea... I'm a wreck rn 😂
I do pretty much exactly the same using hot smoked paprika. A nice sweet twist is a little black treacle added to the mix prior to cooking. Hot sweet and smokey.

"Cover and cook the chicken for 40 mins at 400 degrees and then cook it for another 40 mins uncovered." Won't the chicken be overcooked? I usually just cook the chicken uncovered for about 45 mins uncovered flipping it half way through.
shockyr2 The reason I like to cook it for that long is because the skin is so soft and mushy if I cook it for a less amount of time. Legs and thighs are hard to over cook. If they were skinless or boneless I would def cook it less. I really enjoy crispy skin.
