- Corn & Halloumi Fritters with Hot Honey
200g Corn, boiled
4 Spring Onion
1 Large Red Chili
150g Halloumi
½ Cup Flour
2 Eggs
1 tsp Salt
1 tsp Chili Powder
1 tsp Garlic Powder
Vegetable Oil
Hot Honey
Method
1. Finely chop the green part of the spring onion- use half in the mixture, half for garnishing
2. Deseed the red chili and thinly slice it - use half in the mixture, half for garnishing
3. Grate the Halloumi
4. Put the Corn, Halloumi, spring onion, red chili, salt, chili powder, garlic powder, flour and beaten egg and mix well
5. Heat the oil in a deep pot
6. When the oil is hot enough spoon in the mixture and let it fry for about 3 minutes before turning the fritter
7. Let it fry until golden in colour
8. Drain the oil and put the fritter onto some kitchen towel to drain any excess oil
9. Serve warm, topped with a sprinkling of spring onion, sliced chili and lots of hot honey
