    The rolling is cool.
    The hottest part is the white parts under the seeds, so removing the seeds while being careful to not remove the white is ideal if one doesn't want to get rid of the hottest part.

    I cut in half, set on a cutting board, and scrape them with a spoon. I wear gloves.

    You can get a paring knife. Cut off the top and then gut the jalapeno. Less work

    Are you supposed to pick them when they are green because mine are turning red?

      Jalapeños tend to get small cracks around the rim when they are ready to pick and still green. You can wait until they begin to turn red, this indicates they are ripe, but they are “very ripe” at this stage and don’t tent to stay fresh as long once you pick when red. Letting them go red doesn’t increase hotness, just given them a softer texture.

    Seems rolling the pepper would only work with a jalapeno.... Not for Ghosts, Reapers, or any other hot peppers as most are not round enough to roll.
